I use the can-o-worms system from Australia. In the USA we use red worms Eisenia foetida. These worms are often used for fishing and are composting worms that live in the detritus layer near the surface of the soil. There are other worms a few folks use. We don't use our local nightcrawlers as they aren't good at dwelling in compost. In Oregon nightcrawlers move up and down in the soil more than a foot but don't live in the compost layer so much.
In the can-o-worms system the worms move up from circular tray to the next tray above them as long as there is some contact between the bedding scraps and the new tray up above. They eat up the scraps in the bottom tray and move to new food in the new tray. My can-o-worms has 3 stackable trays and by the time the top tray is full of scraps with a bit of bedding they should have mostly left the bottom tray which can be harvested. So no you don't need more worms. Without a system like this some folks move food to one side of their bin to encourage worms to leave the castings.

Yesterday I rode 45' to gym and did 30' of weights. I also walked 75' early. Might not have internet a few days coming up.
