Good morning! B: coffee L: I have some tuna steaks thawing but no clue how to cook them. Should be interesting. Probably some steamed zucchini with them. D: cooking pinto beans, sausage and cornbread for the boys. I'll have sausage and salad

B- ice coffee w/skim milk plain FF Greek yogurt with: blueberries, cranberries, 1/2 banana, flax meal, chia, wheat germ, coconut, hemp, walnuts, pistachio nuts, muesli. Smoothie with: Kale, raspberries, 1/2 banana, edamame, beet powder, amla powder, unsweetened pea protein powder, collagen powder, water.
L- none
D- 1/2 chicken breast, smashed red potatoes, mix veggies, salad(romaine, tomato, apple, dried cranberry)ranch dressing
S- tea w/milk, mandarin orange, figs, biscotti, maybe some mixed nuts.
E- Gym - fitbit 15K

alias123 , I used this recipe as a basis: www.justapinch.com/recipes/main-course/mexican/ground-chicken-enchiladas.htmlBut I used Carb Balance flour tortillas instead of regular ones. I came up with this NI: **Nutritional Information** Servings: 8 **FreeStyle SmartPoints: 6** Calories: 294 Fat: 12.1 Sat Fat: 6.5 **Carbs: 28.6** Fiber: 13.5 Sugars: 2.6 Protein: 24.8 With a vegetable or side salad, one of these was enough and, although the torillas are rather chewy, it satisfied the itch for Mexican food but capt the net carb count very reasonable for my blood sugar. They were quite tasty.

I think I could make these and sub out the sausage with vegetarian crumbles. Trader Joe's sells some. I sometimes use them when making bean chili.
