What substitute foods for meat, dairy, grains and other foods do you eat?

It isn't exactly a substitute but I use lactose-free milk because I'm lactose intolerant. I do eat poultry, fish, and beef and pork. For non-meat meals I have peanut butter or beans. Have no problem with grains so I eat wheat and other grains.

What substitute foods for
meat: beans, bean burgers, veggie burgers, seitan, TVP, Tofu
dairy: Plant milks made from nuts, rice, soy
grains: I eat a variety...my sister has gluten free flour and sourdough bread not regular
other foods: growing up we had sparkling cider instead of wine or champagne at events and non-alcoholic punch at parties

We keep strict lacto-veg at home ( we eat dairy, eggs are not considered dairy so no eggs!). We eat tofu, tempeh, Gardein fake meat products, and a lot of variety of veggies, beans/pulses and grains. Husband eats brown rice with lunch daily but he's finding it difficult to lose weight so we're going to cut back on his lunch rice. We rarely eat rice at dinner as a result, but we do eat lentils often, and in Fall/Winter I make a lot of soups/stews in the InstaPot that have fresh veggies, some sort of beans, and sometimes a handful of rice or small soup pasta. The only thing I wish my husband could eat was eggs because that would open a whole world of baking possibilities without having to use egg replacements, which never really give the same consistency as real eggs. Though we do now eat Just Egg, which is an egg-like product made from mung beans of all things. I hear it can also be made with chick peas. Anyway, it comes in liquid form and looks like scrambled egg mixture. I make dinner omelets with it and it makes my husband happy because he hadn't eaten an omelet in over 30+ years until this recent product and it tastes like whatever you season it with.

I forgot to say on that recent thread where bbbearsmom asked about new foods we've tried...I just recently got turned on to a wonderful leafy green veg called Purslane! It's similar to spinach but doesn't wilt and shrivel up to nothing when cooked, like spinach does, and you can eat the stalks too. I saute it in EVOO and chili paste, and when almost done I add a splash of fresh lemon juice or white lemon balsamic vinegar, with a dash of S&P and it's amazing! So simple yet so delicious and healthy.
