Back from a good hood walk. One lady walks her huge black cat on a leash. She and LuLa do not hit it off so we didn't stop to chat lol. Guess it's a female territorial thing Time for lunch. In the mood for a hummus and tomato rollup.

Been busy in the kitchen with chicken. Made Instant Pot General Tso's chicken (only 8 SP!) for dinner over cauliflower rice. Chicken in crock pot with Mexican seasonings to be shredded and mixed with cheese for enchiladas. Chicken marinading in Vietnamese spices and pickled vegetables cooling for chicken banh mi sandwiches this week. Need to pick up some cilantro for that. Also watching football in the background. My 2 favorite teams are playing each other today (they played each other in Superbowl 2 which is when I fell in love with the Raiders despite being raised a Packer fan).

Susi As long as it was worth it you can handle the initial hit until the sodium leaves.
Cathy I'm sorry the demonstrations are still happening.Be safe.Good goals.I don't normally take my own dressing along but I knew where we were eating and what I was ordering so I measured 2 tbsp of my Olive Garden light Italian dressing and put it in a little container to take it along.Less calories and only 1 SP.
June It's so good to see you posting when you can.Continued hugs and prayers for you and R.Enjoy your bubble bath.
Ann Sometimes food just happens.Thank goodness the reset button is always close by.
Bee LOL on your question for Susi.I hope you feel better soon. It's hard to be aware when you don't feel well.
LaDonna I'm glad you enjoyed the time with your uncle.I don't have any uncles or aunts left so treasure your time with him.The weather guesser said this should be our last 90 degree day for the year but I don't think we have ever been in the 90's this far in autumn before.I hope he is right. We have 2 cool fronts predicted for the next 7 days.I have had their grilled chicken salad before but yesterday it was exceptional.I'm surprised it's even on the menu with selling cattle going on in the main room.
Ann I can't even imagine walking a cat on a leash.I had an aunt who put her cat on a long leash and attached it to a clothes line outside. My cats would not be happy with a leash on.Scooter loves hers and does not like it when we take it off if it's wet outside.
Susi Your dinner sounds delicious.

Hi... I just sat down to grade more papers.
Read the personals, now let's see if my mind is switched on.
Bee- hope that you feel better soon. Maybe that chicken soup will kick in tomorrow. Hope do. Enjoy your visitor.
Becky R & I ate at a sales barn cafe in Nebraska. Was quite memorable on many levels.
Cathy Sending more prayers for you & your adopted country.
Susi You are a cooking queen! Great prep for a great week.
Ann We must be related. . . R was called for jury duty, but I got that pushed back to the summer. . . . I made my easy pot roast recipe. Threw frozen roast, fresh vegetables, 1 c water, & bouillon in pan, covered w/ tin foil. Cooked for 1 1/2 hr on 375. Left in oven-- without opening door for 3 hrs. Glad that I did b/c PT called & R's first session is 4:30 on Monday.
Mj Glad that Saturday was a good day for you and yours.
Pam Nice to stay home on days like those. There is something to be said for bring in your own space and letting the world go by.
LaDonna So nice that your uncle could lend his voice and spirit tonthe signing. So precious to have that time together.

Okey dokey I either have to grade or mop. Thinking I will grade now, then mop the kitchen & living tom after R goes to bed. I can probably mop the hall & bathroom after work and before the PT comes. If I could figure out how to grade while I mop... I would be golden!
Thx for the prayers. They help.

So many posts but I have no time to respond to them. Laura called at 9 and convinced me to go with her and the kids to see the giant sequoias at Grant Grove in Kingโs Canyon National Park. The weather was beautiful. She packed a picnic lunch and we did a nice short hike. Cathy, I am following the news on Lebanon and hope the unrest settles. I used to have those snack sets but just ran out of room with too many kitchen items. June I am sorry you had unexpected house issues. Continuing to pray for Rโs recovery. A long time ago a man in our hood walked his cat on a leash. It was weird.
Will try to catch up this week.
