I want to try some baked nuts, salty and/or sweet. I've looked at a few recipes for both. The cooking times have varied greatly on different sites and I am a bit confused as to which one to go with. I've made these and enjoyed them. I found them in a recipe search for a friend who wanted to make a diabetes-friendly Xmas gift for a friend.
CINNAMON SUGAR PECANS ★★★★★ Prep Time: 10 min | Cook Time: 20 min | Servings: 12 | Difficulty: Easy
Ingredients:
1/2 cup sugar (or 1/4 cup Splenda White SugarBlend) 2 teaspoons cinnamon 1/2 teaspoon salt 1 egg white 3 cups whole pecans (walnuts, brazil nuts, almonds, cashews, etc.)
Directions:
Preheat oven to 350°F. Combine sugar, cinnamon and salt. Whisk egg white until frothy and add the nuts. Toss until well coated. Add dry ingredients and stir well.
Spread nuts on a cookie sheet lined with foil, in a single layer.
Bake for 20 minutes.
Cool and store in an airtight container. Can be frozen.
Notes: Made with Splenda Blend, these nuts are wonderful—just sweet enough to be a treat without being cloying like Toffee Nuts.

Cinnamon Sugar Nuts with Cayenne and Chocolate ★★★★★ Prep Time: 10 min | Cook Time: 20 min | Servings: 12 | Difficulty: Easy
Ingredients:
1 egg white 1/4 cup Splenda Blend (granulated, NOT brown) 1 teaspoon cinnamon 2 teaspoons unsweetened cocoa powder 1/2 teaspoon salt 1/4 teaspoon cayenne pepper 12 oz. mixed nuts (pecans halves, walnut halves, brazil nuts, almonds, etc.)
Directions:
Preheat oven to 350°F.
Combine Splenda Blend, cinnamon, cocoa, salt and cayenne pepper.
Whisk egg white until frothy and add the nuts. Toss until well coated.
Add dry ingredients and stir well.
Spread nuts on a cookie sheet lined with foil, in a single layer.
Bake for 20 minutes.
Cool and store in an airtight container. Can be frozen.
Notes: These nuts contain the barest hint of heat from the cayenne. If you like spice, you can increase the cayenne to 1/2 or 3/4 teaspoon.

I don't have my cookbooks, but I used to make a roasted pecan that was in the Fannie Farmer cookbook (dating myself!) They were roasted on a pan in the oven, very low temp, and then salted. Heaven. Yes! This is what I was originally talking about! So many different variations on the web. May try googling Fannie Farmer roasted pecans and see what I come up with. Gotta, I was on the old Atkins when I was cooking them, and they more than fulfilled the *high fat* requirement, LOL. I can remember really polishing them off. We'll be entertaining *the kids* in January at the new digs, DDIL is low carb, and I was thinking about giving them a try again...would just need to not get too many pecans!
