DH makes turkey carcass soup too. He adds turnips, onion, carrots and celery (celery cut into about 3" long pieces, not little dice like for tuna salad) and sometimes garlic. Beyond delicious! (I think he starts with a can or more of low sodium chicken broth that says something like 99% fat-free.) neen , and tntsmom , Thank you both for the recipes for your soups! Also thank you for the ideas, everybody else who added information about making soup this time of year.

fitin14 I completely forgot about that soup! I always used to have some in the fridge handy so when I would raid the fridge it would be the first thing I grabbed. I need to get some ingredients for that, thanks!!

I've got turkey noodle soup on the stove right now, made from the Thanksgiving carcass. It really should come off now but it smells so good I keep saying "oh, just a little bit longer." You can do the same with the carcass of a rotisserie chicken.

You can do the same with the carcass of a rotisserie chicken. Yep. Just found two containers of broth from rotisserie chicken that I forgot were in the freezer. Need to turn that into chicken noodle soup now that it is soup season again. We always get two meals out of those chickens, plus a carcass and breast to thrown in the freezer.

If we didn't have to defrost our freezer a couple of times per year, there's no telling what would be lost in its depths. The last time, I actually made a list of all the prepared soups and dishes so that I know what to search for when I need a quick and easy meal.
