I did a quick scan of the recipe and frankly, I can use almost each one of the ingredients she lists. The question is, will I have the patience to make a salad from scratch... Typically, DH and I each use a bag of prepared salad greens from the store (there's one near here that sold the bags for $1; most have recently increased in price to about $1.29 or even $1.49, still a bargain for those of us who HATE having to prepare lettuce from the way it grows, let alone chop numerous types of veggies for one meal...).

I determined pre diabetes according to Dr. Neil Barnard Dean Ornish Dr/ Mcgregor. dr. Thurman is vegan. They have done research that it helps cure. I am going shopping tomorrow for fruits and veggies. And more Oatmeal. I have lots of oranges in my bin.

Holly Gail, I think you could choose from any of the fruits and vegetables found in each of the colors of the rainbow and have a marvelous salad. I would not limit myself to just what is in the recipe. Also, long ago I did the Diet Center Diet and it suggested buying five or more vegetables at one time and preparing/storing them to use throughout the week in stir fry, salads, snacks or whatever. Do the cost comparison to see if it is cheaper to buy five veg and prepare for five or more meals or if it is cheaper to rely on the bagged salad mixes.

amyrs, Diet can control type II Diabetes many times. Weight loss also impacts the disease. The Type I Diabetes is a beast of another color and though assisted with the right diet it cannot be cured by what you eat. If those oranges begin to go "off" you could juice and freeze some of them.
