Good morning.
This thread is for anyone that has been away from healthy eating, had a gain and is recommitting. We accept all forms of healthy eating here, whatever that means to you. We touch base daily for accountability and to encourage one another. This is a judgment free zone.
We all struggle to get the weight off and keep it off. Sometimes this is a challenge, but we never give up and that is the key. Regardless of our situation or where we are in reaching our goal, we count on talking to each other every day and are blessed to have one another as friends.

Good morning RO friends.
I hope everyone had a good day yesterday and is well rested this morning. I made the best side dish of cauliflower rice last night that I have ever had. I took a bag of frozen cauliflower rice and sautéed it on the stove in 1 tbsp of butter and added salt and pepper. I mixed 2 tbsp sour cream, 2 oz of cream cheese and 2 egg yolks, I blended those things up really well. I added the hot sautéed cauliflower rice to the other ingredients and used my hand stick blender to mix it all together. It was so creamy and so good, even DH liked it. It will be made again in the future.
Visit to the vet went well. Zeke is now 67 lbs and will be 3 years old this month. Xena is 14 months and is 51 lbs. Why is taking the dogs to the vet so expensive? I could certainly use a little of Lora's millions now.....
Lora - my monkfruit review lol - I think it tastes closer to sugar than anything else that I have tried. I put 1 tsp in my 16oz coffee this morning. It is not over powering sweet. Because is has 4 g of carb in one teaspoon I can't bring myself to use more than that in a cup of coffee. I do not get an aftertaste. It is hard to describe. It takes enough bitterness out of the coffee without being super sweet. I also used creamy cashew milk with only 1 tbsp of HWC (because carbs - ugh) I am trying to figure out a way to lower the carbs in my morning coffee - obviously no sweetener or HWC would do the trick but I am not ready for black coffee. I am not sure I ever will be.

RobinMD sorry about the dryer but not sorry - LOL sounds like a new one is exactly what you need. How is your DD feeling? My DD text me last night and she has the flu now. It really was just a matter of time. She is a preschool teacher and works at an elementary school. Last Friday between staff and students they had over 100 people out with the flu.
Susie hope you got some reading done last night. You always impress me with how busy you are.
Janet - lol at putting the cat in the box. The pups like to ride in the car so really no issues getting them in there. When they see their harness they go a bit crazy because they know they get to go out the front door lol. They are so goofy.

I slept until 9 this morning! Yesterday wore me out. So yes Jana, I think I'm well rested at this point. Haha.
Mark's follow up is this afternoon. I think he'll probably get his stitches out. If nothing else that will make him a lot more comfortable. The little ends of those stitches are kind of pokey and uncomfortable. Keeping our fingers crossed for a normal diet going forward too.
Jana - yay for a successful cauli dish! DD also thinks monk fruit is the closest to real sugar. But yeah, that carb count is steep, especially if you're counting total, which I've been doing for a very long time now. Have you tried adding a little salt to your coffee? It's really just takes a tiny bit. It's not going to make it creamy, of course. But it does tone down the bitterness and mellow it out. I had added back sweeteners to coffee awhile back, but am now back to sweetener free. That little bit of salt makes a difference for me coffee wise.

Hello ROs....got to my morning gym class, then back home to change and head to the dentist with DH. I really just went because I could read on the drive - ha. We made a quick stop at Trader Joe's (I ran in while DH sat in the car), then went right home and I whipped up a simple lunch and am now off to mah jongg, while DH goes to LLI for a class...jeesh. After mah jongg I will have about 90 minutes until it is time to pick up DGS and head to church for dinner... BUT THEN I will have my free evening while DH is at his study group... yippee.
Lora - I laughed out loud at this comment you made last night: "I've got another busy day of watching it rain tomorrow. I'll want to make sure I'm good and rested up for that." Ha Ha Ha ---glad you got that rest!
Jana - thanks for starting us....that cauliflower rice dish sounds delicious. I often use the cashew milk because it has 45% calcium which is about double what you get in milk.

Lora I have not tried adding salt to my coffee but I might try it. My favorite coffee is creamy and sweet. But between the monk fruit and the HWC the carbs add up FAST. I am counting total carbs and not net carbs as well. Maybe I will try to do the salt tomorrow morning and see if it helps. I don't know if I ever mentioned to you but I got the Redmond's salt from Amazon. I have one at home and one in my desk at work. Glad you are well rested.
Susie I have been using cashew milk because I don't really care for Almond milk and HWC has carbs. Those carbs in HWC just make me mad lol.
Got a text from my DD and she has the flu. They told her to not go back to school until Monday.
I am actually kind of caught up at work - so it feels a little weird today.

Poor Mark. His surgeon says that he's healing nicely, but wants to leave the stiches in for 4 more weeks to be on the safe side. His food options have opened up a little bit. But nothing hard or crunchy, and he needs to be careful to chew on the left side only. I know he was hoping to get some or all of the stiches out today. I'm sure this feels like a never ending process for him right now.

Hello ROs, looks like I didn't post yesterday. I had a super long day lobbying in our state capital for funds for syringe exchange and to continue funding for our care management programs that serve people with Medicaid and chronic medical conditions. I am not optimistic about either one. Left the house at 6:30 in the morning and got home at 7:30 at night with the return 2 hour drive in the pouring rain and darkness. Stopped once because I was so hungry, got herb tea and egg white bites from Starbucks, which weren't bad. Ended up talking on the phone a lot when I got home, more DD marital misery. I keep telling myself she'll be fine but it is painful to be part of this, and of course more for her than for me.
Today I started the day early as well with a breakfast meeting and then a mandatory sexual harassment training, followed by a 2 hour meeting on job titles and HR policies with our merge partners. A DF canceled our dinner date so I came home early and took a nap, feeling almost human now. Am going out this evening to hear a workshop by Molly Carmel, author of the Breaking Up With Sugar book I've really gotten a lot out of. Unfortunately, an hour drive each way. I swear when I retire I will not do any drives longer than 15 minutes! Of course this isn't related to work but I'm so sick of being in my car.
RobinMD am glad you're getting a new dryer and that you won't have to pay for it! Win win. Also good you didn't miss your emissions check. Btw, how's your knee these days? You haven't mentioned it in awhile. I'm picking up the referral for an X-ray of mine tomorrow. I'm sure it's arthritis but we'll see.
Lora, glad your checkup went well but sorry Mark didn't get his stitches out. Bummer! It really has been a long stretch for him. 4 more weeks, eh? So sorry about the 7 million. I was dreaming of various vacation destinations with the ROs.
Janet, your teaching job right now sounds so hard, especially when you have one child who is so troubled, and I'm assuming disruptive. What kind of support or resources does the school have to give you or to the child's family? Sounds way too hard for one person to manage day after day.
Jana, oh no, DD has the flu? At least it's not the Coronavirus! Is she one of the many people who got the flu this year despite having a flu shot? Poor thing. Please stay well yourself though - I'm sure you want to run right over there and take care of her.

Happy Hump Day (even though it is almost over),
Jana, sorry to hear DD has the flu....we see a lot of teachers for colds and flu. Their students have just about anything and everything. I hope she feels better soon. She will be contagious until she is fever-free for 24 hours. My DD went back to work on Tuesday. She had spiked a fever again on Sunday, so they told her stay home one more day. I managed to avoid getting it. Boy, that cauliflower recipe sounds delicious. And, by the way, I have to agree with the vet visits being so expensive. My vet is pretty expensive, but I just love them there, it is 1/2 a mile from my house, and I've been taking my pets there for 24 years. They know me and appreciate the fact that I can do a lot of things on my own, and trust my assessments of their illnesses and injuries, and let me get antibiotics and some treatments without bringing them in, every single time. Andi, my knee is doing well now. I am really relieved that I didn't have any lasting damage, and I was able to really take care of it that particular week. I hope your knee problem is an easy fix. It will be good to see what the x-ray shows. You sure had a busy day. At least you ended up with a little down time. Lora, I hope you don't get any of the really severe weather. It looked like strong storms might be headed in your direction. Glad you are all rested up for it though! HA! Poor Mark, I can just imaging how irritating those stitches must be.

Janet, your "angel" sounds like such a challenge for you every day. I agree that it seems like a lot for one person to manage.
I couldn't get here very early tonight, so I am going to head on up to bed soon. I just need to put something together for lunch and make some coffee. I did get the car done today, and passed the emissions test, so I am good for another 2 years. Yippee! I hope everyone has a good day tomorrow....we can almost see the weekend! Waving to all, RobinMD
