June quite brisk here as well. Just came back from a 2.4 mile walk. I'll go back out later.

LaDonna Happy planting today! Ha ha ha. . . I am not filtering as many random thoughts as I usually do. Walking talkie. . . The idea just amused me.
Hopefully that is my last marathon of school work. Then the last three weeks will fly by.

Not fried rice, June.
Chop an onion and saute in some EVOO. Then drain 2 cans of peas. Put the peas in with the onions after the onions have sweated. Add 1/4 cup of pea juice. Stir ever so often, cook for 45 minutes. As you stir kind of mash some peas.
Peel the boiled eggs --- however many you want. I have 6 in mine because I love the eggs. Turn off the peas and put in the eggs. Let them sit for 30 minutes before serving.
They are so much better the next day.

Sorry you took on so much extra work June but glad you are pretty much ready for next week. Bee - I was never much of a pea fan but I'm coming around. Enjoy. LaDonna - Enjoy your day and getting back on track MJ - It warmed up here but the wind never quite left us. We did get out for a walk and a short bike ride into the wind. I'm making red Thai chcken with thai vegetable fried rice with cashews for dinner. Tomorrow I'm making risotto. It's rare for me to have rice, never mind twice in one week.

Bee Thx for the recipe. Sorry that so wsnt clear....I was just thinking that I like the taste of scrambled eggs with other vegetable like peas I fried rice.
So many dishes are better after the food "marry" a day .

Susi Glad that you could get outdoors for even a short ride and walk. Dang your meal tonight sounds like you were at a restaurant! Do you do curbside? grubHub?
Sigh. . . I should not care so much. But at the end of the day, I will knowthat I did what I could to support students. That said, my game plan will lighten the load fromhere on out.

Lol June. Happy to have a good reading buddy Susi the wind whem it blows is what's making it feel much colder. For some reason it decides to start up as soon as we get a distance from home.... Will try it one last time at 6:30 ish!

Saturday ran away from me so I have no time for personals. Older daughter Laura surprised us with a flower and chocolate delivery from a local florist. Younger daughter Rachel stopped by to get the kidsβ Easter baskets and brought us peanut butter cookies. Easter dinner pickup is a DISASTER. There must have been 150-200 cars in a line that went through narrow neighborhood streets on both sides. Bob turned around and came home. Lauraβs husband is going to try to get our dinner when he gets theirs. If not, I have food at home.
Our mistake!!! All of those cars were in line to get cinnamon rolls from the lady who sells them at the fair. Laura called the caterer when I told her how crowded it was. We definitely saw the wrong sign. Anyway Jeremy picked up our meal and Iβll reheat it tomorrow.

So sorry that happened, Audrey. Glad that Laura was able to pick up your Easter dinner. I'm sure it will be delicious.
We took our final walk of the day. It was quite cold with the wind blowing so we cut it short.
I am not going to get 'jammified' and relax.
