This is an oldie but: Buy a whole chicken and boil it in salted water until it is cooked through. Remove the chicken and let it cool enough to handle. Remove the breast meat and set aside. Remove the dark meat and set aside.
Dish 1: broth Toss the bones and skin (if you like)back in the cooking water with enough water to fill the pot about 2/3 full. Add in any veggie scraps you may have (onion skins, carrot butts (lol), celery, etc)and whatever spices you like. Bring to a simmer, cover and let cook for 1-3 hours, as long as you can. Let it cool, strain and store the broth (freezes well).
Dish 2: chicken salad with the breast meat - however you make yours.
Dish 3: chicken taco filling with the dark meat Chop the meat and set aside. Saute: 1 large onion, diced 1 carrot, sliced or diced thin 1 jalapeno sliced thin (optional) Until soft. Add in 1 cup chicken broth, the diced dark meat and 1 teaspoon garlic powder 1 teaspoon ground cumin 1 Tablespoon chili powder 1/2 teaspoon dried oregano salt and pepper to taste
Simmer over low heat until most of the liquid evaporates. Serve in tortillas, mixed into cooked rice or over salad.
