I really don't have too much going on - my DD's are on spring break and today they are volunteering/helping their band director at high school with some winter guard stuff - yay for community service hours!

Meeting a friend for lunch for her birthday. My chicken salad yesterday was very good and everyone enjoyed it. Here is the recipe, lmenglish. Easy to prepare and you can add/omit any veggies you want. I think the cumin in the dressing was the secret ingredient that everyone enjoyed.
Chicken Cuban Salad
For 4 people -
Dressing: ¼ c. lime juice 1 Tablespoon olive oil
½ t. Cumin ½ t. Salt
I tripled this recipe and have some left over.
¾ pound chopped cooked chicken
1 ¼ c. chopped pineapple
1 c. sliced jicama (matchstick size)
¼ c. sliced red bell pepper
2 scallions, sliced
The recipe called for 1/3 c. chopped cilantro which I omitted.
Notes: I tripled this recipe which made a very large bowl of salad. I also added ½ bag of spring mix lettuce. You can add that or any other lettuce or omit it completely.

I’m looking at the dreary sky and everything outside is wet. I’m listening to water drip into the fireplace. Gonna be that kind of week.
My food is planned for the day and breakfast is out of the way. I’m ready to head for the shower, then it’s off to the Library for the day’s volunteer work.
Blood sugar has been a bit more stable as I continue to tweak insulin dosages downwards. I did hit my personal minimum of 100 at 2:30 AM, but I was prepared by having stashed a can of Pineapple juice in my nightstand. Yesterday I was hitting my minimum just about mealtimes, so that was encouraging. I hope today goes as well.

I had a two hour training this morning (8:30-10:30) and that's 2 hours I will never get back! I did the same training in 2009, but so much has changed I thought it might be good. Yea, NO! AND I have another two hours this afternoon. Oh well, it will look good on my evaluation! LOL
Not much else to report. It's been a weird food week and no matter what I do, my weight just stalls, or goes up! GRRRRRR! I go back to the nutritionist tomorrow morning. *sigh*
I took the morning off to go to the dentist and get my license renewed. I only had to wait a couple minutes at the RMV which was a nice surprise. That license picture is another matter! I forgot my lunch and stopped at the store on my way to work. I grabbed a Greek yogurt and some fruit and had another points shock. That measly 130 calorie yogurt is 5 points. I usually buy plain yogurt and add my own fruit so I forgot that the flavored yogurt is so pointy. Oh well.
We're getting another cold front with wind chills around zero for the next two days. I'll be happy when I can put my winter coat away.
