LOL ann1953 I know! Way back when I was pregnant there was a pizzeria called Numero Uno that had a deep dish with the sweetest tomatoes I have ever eaten. ๐I craved it. But I am *trying* to be good here and I couldn't find a light deep dish pizza recipe, ha!

How about a deep dish pizza for the meal, caramel sundae for dessert and raisin spice bar (yes I do like them) for a snack?
Oh Wait, I'm supposed to be back on plan. I guess I'll stick with my salad for lunch- blah!

I think the National Read a Road Map Day should soon become National Love your GPS Day. I haven't looked at a road map in a long time. We depend on our Tom Tom. I've never made caramel, but I've made things like caramelized onions, bananas in caramelized sugar, and various types of Upside Down Cakes with butter and brown sugar caramelized on top. Anyone who loves Pineapple Upside Down Cake might like Strawberry and Kiwi Upside Down cake. It is made in a similar way, but after you put the butter and brown sugar (or equivalent sweetness amount of Truvia brown sugar blend) on the bottom of the pan you decorate the bottom of the pan with sliced strawberries and sliced kiwi fruit. I also use some fresh blueberries to fill in the gaps. Then I create a sponge cake with the equivalent sweetness amount of Truvia baking blend and then after baked and cooled, serve with more fresh fruit on top and fat free or sugar free whipped topping. Yum! Here is the original recipe: www.lecremedelacrumb.com/strawberry-kiwi-upside-cake/As I said, I substitute Truvia brown sugar blend and Truvia baking mix for the full sugars to cut down on the sugars. I also use half the amount of butter on the bottom. I do that based on the Pineapple Upside Down cake recipe on the Truvia website at www.truvia.com/recipes/pineapple-upside-down-cakeThe Truvia Pineapple Upside Down Cake nutrition info is as follows: Serving Size: 1โ8 of cake Nutrition Per Serving Calories 280 Total Fat 14g Saturated Fat 3.5g Trans Fat 0g Cholesterol 40mg Sodium 270mg Total Carbohydrate 43g Dietary Fiber 1g Sugars 16g Erythritol 10g Protein 4g Vitamin A 6% DV Vitamin C 6% DV Calcium 15% DV Iron 8% DV I don't know the nutrition info for the all regular sugar version of the Strawberry Kiwi Upside Down Cake. It's the REAL thing, so I'm sure it's not that diet friendly.

DebDoesWW ...
Deb, you certainly were ambitious this morning!
I was headed to the senior center to exercise, but decided to get my shopping done first. That entailed enough running around to wear me out, so no exercise at the senior center after all.
Sadly, I didn't see your comment directing me to buy Smucker's SF Caramel, so I didn't. LOL
While I was putting groceries away, I found a rack of ribs in the freezer. Looking at the original date, it was July of last year. I defrosted them and cooked them in the InstantPot (1 c. water, use rack, 20 minutes on high pressure, natural realse for 15 minutes, then quick release and remove. Recipe calls for saucing and sticking under broiler; I sauced and stuck in the AirFryer for 6 minutes.).
These ribs were fantastically tender. And I realized while eating them that they were in the freezer because they were planned as dinner for July 4 but quickly got thrown in the freezer after I got home from the emergency room that day after being stitched up from my fall. So, you see, I DO plan my meals. It sometimes takes 9+ months to execute the plan, but I DO plan.
