You know the 1 point muffin recipe?
Banana(s) 4 medium
Egg(s) 2item(s), l Vanilla extract 1tsp
Baking powder1tsp
Unsweetened cocoa powder 1Tbsp
Kodiak Cakes Power Cakes Protein packed dark chocolate flapjack and waffle mix 1cup(s) (I've used the chocolate chip one, too and omitted the cocoa powder. but I added extra chocolate chips, 1/2 oz of mini chips. they are 2 point muffins)
Preheat the oven to 350F. Spray a 12-opening muffin pan with cooking spray. In a large mixing bowl, mash the four overripe bananas with a fork. You can use an electric mixer to get the lumps out, if desired. Add the eggs and vanilla extract, and whisk together. Add the pancake mix, the baking powder and the cocoa powder and stir to combine. Fill each muffin opening with 1/4 cup of the batter. Bake for 25 minutes.
Well . . these are good. but they are missing something. Frosting! So I got an idea. The oikos triple zero yogurts are now 1 pp. Use no more than 1/3 of the container for zero points and use that for frosting. I particularly like the cherry flavor and my plan is to try it tomorrow on one of kind of each muffin. That will be 3 pp for 2 frosted muffins. I'm sure other flavors would work, like strawberry and the peanut butter banana flavor. I eat the yogurts nearly everyday so I always have some on hand. I'm thinking this will take the muffins to a new level. I'll let you know!

I tried my yogurt frosted muffins. They were good! For some reason, something didn't agree with me right after I ate them. it might have been from dinner but that was a while before. or maybe I had the muffins frozen too long. I had made them in the summer. Or maybe the yogurt was too heavy in my stomach at 9 pm. I don't really know but I will try again because they were good!
