A point friendly idea for dessert is baked apple. I do mine in the microwave. The first time I did it, I used my apple slicer, corer. I sprinkled on (you can do this in an ziplok bag and shake it) and made sure everything was coated with 1 tsp on stevia and 1 tsp of cinnamon (or more to taste. recipe suggest 2 TBSP). I microwaved for 3 min. If you like your apples less soft, 2 min. would work. It's 0 pp
I liked it and it was filling but it didn't really feel like dessert.
So I looked into toppings. this is a modified apple crisp topping. Diced apple, sprinkled on: 2 tsp stevia, cinnamon, allspice, nutmeg, ginger and mixed to coat the apple pieces then I mixed 1 tsp stevia, 2 tbsp steel cut quick oats, 1/2 tbsp light butter + canola spread. Put it on top of the apples. it kind of clumps together to it will be here and there.
I microwaved for 4 min. (if you prefer crisper apples do 3 min. It's 3 pp. I found this more satisfying as far as dessert goes.
Next time I'm going to go back to the first idea, use a few more spices, not just cinnamon. I liked the smaller apples better so I'll either dice it or do thinner slices. And I'm going to add good good sweet like syrup (maple flavored syrup made with stevia, no sugar). T tbsp =2 pp. Not sure if I'll use this much or maybe 1/2 tbsp. I'll let you know.

The next time I tried this I sliced the apples thin. In addition to the tbsp of good good sweet like syrup, I used 2 tsp stevia, cinnamon and nutmeg, 1 tsp vanilla and I added 1 tsp of light butter and canola spread. It was pretty good. there was a lot of liquid left in the bottom. Not sure how to make it mix with the apples more because I imagine the liquid was quite tasty but probably not good to eat by itself. it was 3 pp

You could try soaking the apple in the "sauce" for an hour (or more) before cooking it- that might impart the flavors into the apple more

That's an interesting idea. I'll have to try that.

I have a new idea for an apple crisp! I got it from a WW recipe for a microwave strawberry crisp. The topping was low fat granola! 2 sp for 2 tbsp -= 1/8 cup. It was much better. The one I made seemed like it needed "something". This was great with the strawberries and I look forward to trying it with an apple.

I did the microwaye apple crisp yesterday. I liked it and will do it again. It was my favorite of the baked apple ideas.
Directions: thinly slice an apple or dice it if you prefer. Put the slices in a microwaveable bowl large enough to allow you to mix ingredients. (I used a large( 18 oz) soup/cereal bowl springle with: 1 1/2 TBSP water cinnamon nutmeg sugar 1 tsp (add 1 pp) or 1 tsp stevia 1/2 tsp cornstarch or 1 tsp flour
Mix to get the apples coated.
Microwave (high) apple mixture 3 min. Sprinkle with 2 tbsp low fat granola. If desired, microwave high 15-30 sec. (I didn't do the additional microwaving).
2 pp, 3 pp if you use sugar. Points are for granola and sugar only. Everything else is zero.
This one did not have all the juice on the bottom. I am guessing the reason for the juice before was either the apple was more juicy and/or I had used some butter and canola spread in the recipe and of course the syrup and vanilla, which I did not use this time. I wasn't sure if I'd miss these ingredients in this recipe but I did not. For me, this was "just right".
