Keto Bahn Mi Rice BowlWhat I would change: First: since this is a keto recipe, they went light on the veggies- I added a lot more cabbage and I made some quick pickled radishes and carrots to go with it (slice thin, dissolve equal parts unseasoned rice vinegar or white vinegar and water, a little sweetener and salt, microwave just until it's hot not boiling, then pour over the veggies and refrigerate at least an hour. The sauce was very bland. I added a little lime juice and stevia to it. I think I'll use a yogurt based ranch instead of mayo next time. I added some salt, pepper, ginger and coconut aminos (or soy sauce) to the cauliflower rice because the way it's written is not flavorful. Just enough so it wasn't a blank flavor in the bowl. I doubled all the seasoning in the meat. Next time I think I'll use 90% or 93% ground turkey instead of pork since turkey seems to absorb flavors better.
