I'm thinking of using cannellini beans instead of chicken, veggie broth instead of chicken broth and mashed/riced cauliflower (or just steamed broccoli)instead of the potatoes to keep it lower calorie - any other ideas?

This is basically a cream sauce or veg in gravy with a protein source. When making vegan shepherd's pie they often use lentils with sweet potato mash on top. If you are doing this side by side, as he did, then you can do the cauliflower mash with the sauced vegetables (any veg would do) with any protein. Seitan chicken alternatives are high in protein but also high in gluten. I have made a tasty walnut-lentil faux meat for spaghetti bolognese and just saw a recipe using cauliflower and nuts for the same. I have had jack fruit as a faux-fish chips meal with sea week and batter and have heard it is great in a variety of dishes and might work in this as might a portabella mushroom sliced and sauteed.

cathygeha, thanks so much! I'm trying to add more non-meat meals in I've never tried jack fruit, and I see Kroger has it(canned) so I may try that. I've seen a lot of youtube plant based people use it "like shredded pork or chicken" in tacos and things

I have only had the jack fruit in that faux fish and chips plate but my sister's daughter-in-law has made things with it and likes it. I tend to have a LOT Of beans as things like seitan, tofu, and other non-meats are not available. I make my own veggie burgers from grains and beans, too. Are you still doing keto or all foods again?

cathygeha , watching processed carbs (I do eat chickpea or lentil pasta from time to time, if I have bread it's whole grain). I did make the recipe and it turned out pretty good! I had 1 can each of chickpeas and cannellini beans, so I used them both and it made for a nice textural difference. I had HEB's low-sodium veggie broth and I wasn't crazy about it, but I sauted the veggies until they were almost caramelized, so that added flavor. Overall I'd make it again and maybe use a fake chicken broth instead (if I can fine one without MSG and other stuff I'm trying to avoid).

DotRen, Thank you for the review of the recipe. I know that there are recipes on vegan websites that are for faux-chicken broth mixes but have never tried them. Hope you find the bouillon cube, or broth, that will work perfectly for you.
