I have a lot of it and I want something that's got a lot of flavor because for some reason everyone asked for turkey for Christmas dinner and barely ate it. (Geez, people! We could have had a Christmas fish or something!) My SIL once made something like a turkey ala king that was really good, but I lost the recipe and she's not available to ask.
Anyhoo, do any of you genius (or any of you who won't claim genius but have something good) WW chefs have something in your arsenal that is totally delish? Thanks!

Turkey or Chicken Pot Pie
2 Deep Dish Pet Ritz Pie Shells 1 small can peas and carrots drained 1 can cream of chicken 1 can chicken and rice soup (do not drain)
line the bottom of one of the pie shells with chopped turkey or chicken, mix the drained peas&carrots and the two cans of soup together and spread over the meat. put second pie shell on top and slice a few vents in the top, bake at 350 for one hour. easy and delicious!

I do Turkey Breast Parmesan and the kids love it, I don't really use a recipe but here it goes.
Spray 9 x 12 pan with Cooking spray.
Mix 1 egg and splash of milk in bowl. Pour out seasoned bread crumbs on a plate.
Dunk sliced breast in egg mixture then dredge in crumbs.
Place in dish.
Back at 350 until it is almost done (depends on how many you are cooking.)
Open can of spaghetti sauce and spoon over breasts, top with grated mozzarella, bake 10 minutes longer.

This is my favorite chili recipe (I've posted it before): www.eatingwell.com/recipe/250833/white-turkey-chiliI just sub cubed leftover turkey in for the ground turkey. It is better than the original version. It is also good with leftover rotisserie chicken.

Entree salads with turkey on them (instead of chicken) are good and diet friendly. Ideas:
*Greens salad w/apple, walnut, blue/gorgonzola cheese, scallions and chopped turkey cubes (Balsamic vinaigrette or apple cider vinaigrette)
*Greens w/sliced cooked beets, walnuts, scallions, goat cheese and chopped turkey cubes (Sweet Balsamic vinaigrette)
*Greens w/orange sections, almonds (preferably honey or other sweetened almonds), scallions, turkey cubs (orange vinaigrette)
*Arugula or watercress, chunks of avocado, chunks of papaya, scallions, chunks of turkey (sweet lime vinaigrette)
*Mache greens, chopped chunks of grapefruit, pomegranate, and small slices of turkey (Lemon/dijon vinaigrette)
*Cobb Salad (recipes online everywhere mostly containing thin sliced ham, hard boiled eggs, romaine lettuce, tomatoes, either bacon and/or avocado and a red wine vinaigrette with a little garlic, lemon juice and drops of Worcheshire sauce)
Any of your favorite sandwich chicken salads, but made with turkey instead. Such as:
* Turkey Waldorf Salad (mayo, turkey chunks, apple chunks, walnut, onion, salt/pepper)
*Turkey salad with mayo, almonds, craisins, onion, salt/pepper
*Plain turkey salad with mayo, onion, celery, chopped celery greens, dried tarragon, salt/pepper
My mom's favorite Thanksgiving day "casserole" (one layer mashed potatoes, one thin layer gravy, one layer thinly sliced turkey, one layer stuffing, topped with spoonfuls of cranberry sauce. A layer of green bean casserole can also be added. Spoon globs on plate and enjoy!
Turkey enchiladas (plenty of recipes for chicken enchiladas online or make cheese enchiladas with turkey bits)

You coulld make Turkey retraining or Turkey salad with cranberries, with mayo and celery

This is a recipe a dear departed friend used to make. You could probably figure out ways to lighten it. As written it is a fabulous casserole.
Turkey Tortilla Casserole β

Servings: 8 | Difficulty: Easy
Ingredients:
5 Cups cooked Turkey, sliced 1 Can Cream of Mushroom Soup 14 Ounces Green Chilies, diced 1 Can Black Olives Sliced 1/3 Cup Green Onions, sliced thin 3/4 Teaspoon Cumin 8 Medium Corn Tortillas, cut into 1/2β strips 2 Cups each Monterey Jack and Cheddar Cheeses, Grated
Directions:
Combine turkey, soup, chilies, salsa, olives, green onion and cumin. arrange half of the tortilla strips on the bottom of a greased, shallow 3-quart baking dish. Cover with half of the turkey mixture and all of the Monterey Jack cheese.
Top with the remaining turkey mixture. sprinkle Cheddar Cheese evenly over all. This much can be done ahead. Cover and chill as long as 24 hours. Preheat oven to 350 degrees.
Bake casserole uncovered for 30 minutes (45 minutes if refrigerated) or until cheese is bubbly and mixture is hot. Let stand 5 minutes. Cut into squares and serve.
