1/2 gallon unsweetened almond or coconut/almond milk (or plant based, low-carb, no sugar milk of your choice) 1 family size packet of sugar free vanilla instant pudding mix (1.5 oz) 8oz no sugar cool whip (or true whip) - optional for "body" 1 teaspoon vanilla or rum extract Cinnamon, apple pie spice or pumpkin spice to taste
Whisk the pudding mix with 1 cup of the milk until dissolved. It may or may not thicken depending on the type of milk, time of day, if the planets are in alignment... Once dissolved, whisk into the coolwhip along with the vanilla or rum extract, then whisk into the remaining milk. Add seasoning to taste.
I find this sweet enough, but you can add more sweetener if you prefer. Shake very well before serving.
