Broccolini with roasted red pepper sauce ….today's W.Post
In this dish, spears of roasted broccolini are served atop a puree of roasted red bell peppers made boldly flavorful with roasted garlic, olives and capers, and just enough hot pepper to give it a tingly warmth. A finishing sprinkle of toasted walnuts adds an appealing crunch. Enjoy it as the highlight of a meal with, say, rotisserie chicken and whole-grain bread, or as part of spread of small plates. It’s a nourishing dish that pops with flavor and color. Storage: Refrigerate leftover sauce for up to 4 days. Refrigerate roasted garlic for up to 1 week, or freeze for up to 1 month. Ingredients measuring cup Servings: 4
1 small head garlic
5 tablespoons extra-virgin olive oil, divided
2 medium red bell peppers (12 ounces total)
2 long red hot chiles, such as serrano or Ladyfinger
2 bunches broccolini (1 pound total), trimmed
1/8 teaspoon fine salt, plus more to taste
1/4 cup walnut halves and/or pieces
1/4 cup pitted kalamata olives
1 tablespoon capers, drained and rinsed Directions Time Icon Total: 45 mins Step 1 Position a rack in the middle of the oven and preheat to 450 degrees. Line a large sheet pan with foil. Step 2 Cut off the top of the head of garlic to expose the cloves. Place the head of garlic on a small piece of foil, drizzle with 1 teaspoon of the oil and wrap to seal. Place the wrapped garlic on the pan, and add the bell peppers and red chiles. Transfer to the oven and roast for 15 minutes. Step 3 Transfer the chiles to a large bowl and cover with a wide plate. Turn the bell peppers over, return to the oven and roast – along with the garlic – for another 15 minutes, or until the peppers are tender, with blistered skins, and the garlic is soft. Step 4 Transfer the bell peppers and garlic to the bowl with the chiles and re-cover to let the peppers steam so their skins loosen as they cool. Reduce the oven temperature to 425 degrees. Step 5 In a large bowl, toss the broccolini with 1 tablespoon of the oil and the salt. Transfer the broccolini to the same foil-lined sheet pan and roast for about 15 minutes, or until it is firm-tender with lightly crisped tops, turning once midway through. Step 6 While the broccolini roasts, arrange the walnuts on a small sheet pan and place in the oven for about 5 minutes, or until fragrant and toasted. Let the walnuts cool, then coarsely chop. Step 7 Once the bell peppers and garlic are cool enough to handle, about 20 minutes, peel off and discard the pepper skins, then discard the stems. Cut the peppers in half lengthwise and discard the seeds. Squeeze 6 cloves of garlic from the skins. Step 8 To a food processor, add the bell peppers, 1 of the chiles, the 6 garlic cloves, the olives and capers and pulse until combined. (Refrigerate the remaining garlic cloves for another use.) Taste, and add the remaining 1 chile, if desired. Add the remaining olive oil and pulse to combine. Taste, and season with additional salt, if desired. Step 9 To serve, spread a heaping 1/4 cup of the sauce onto each plate, top with the broccolini and sprinkle with the walnuts

Linda, that recipe looks good and healthy. I hope you are well today.
I went Krogering this morning. It wasn’t too busy. The lone casher without packer was busy again, so I went to self serve. I got a message that I had too many goods in the packing area, so I needed to pack a few. The attendant came over and started packing for me, so I continued scanning and by the time I paid. She had it all packed. Winner, winner, chicken dinner! After we unloaded the car and out things away, we went to the fish store for salmon for NYE and I picked up a couple of stuffed scallops for appetizers.
It's been a cloudy day today and about 5° colder than yesterday, so not a bad day. GF is really sick and we won’t be lunching this week. I hope she doesn’t have one of the viruses.

Dsil and family are sickish like with winter cold after holiday, except for her son in law with COVID. Lot of people getting that, not as bad here yet. It comes with tourists, Fiesta Bowl, Golf tournament, etc. so far nobody sick in my family now. Knock on wood. we just have the sinus irritation and headache from bad pollution days. People are not supposed to burn outside or fireplaces on certain days but they do it anyway, gee thanks, guys.
We were in high 30s last two days around dawn, but getting a little warmer for a couple.
I am finding winter clothes I forgot I had with warm weather dragging from late Feb to summer hideous heat, to hot in fall and back to record warm right up through most of Dec. saving up a nice Chico's gift card to get new warm weather stuff this spring. Sooooo sick of those clothes for months and have had most for years.
Time to clean up that closet are rearrange stuff!
Take out Italian tonight.
one neighbor took down lights already. Most wait a week or to 12 day. I sure miss them when it's just streetlight and porch lights.
i ordered a zip up bag to go around the standing tree and close up so nothing gets into it in the garage. Going to have it for a while with lights while it is still dark. Skipping the valentines and st pats stuff this year. Might do flowers and birds ornaments , then easter eggs and then stash it.
Visited my friend in rehab with snacks and goodies for NY Eve and a marzipan pig to bring good luck in the next year if you eat it NY Day. She kept us talking 2.5 hours. She was in need of company. She now has my purse readers since in the move in her glasses got lost and for days she has not been able to read stuff! Now working on finding a mobile nail person and visiting hair person. Her acrylics are growing off the ends of her fingers and need a special tool to remove.

Thanks for the start, Chele. It amazes me how many people think coconut oil is healthy. It has more saturated fat than beef, so a good plan to avoid it. Is it used in the recipes in ways that it would be easy to leave it out or would you need to sub for it? I think The Crown was just about completed when the Queen died, so I wonder if they would have moved closer toward the end of her life with another season as an option, which could have included when Meghan met Harry. Heels aren't my thing either and I also have wide feet, so no Mary Janes or ballet slippers for me. I think your GF is going to be happy to get through 2023 and I'm sorry she has one more thing going on. I hope she recovers quickly. Her immune system could be compromised from taking care of her DH plus whatever she was exposed to in the hospital. Too bad about the lunch postponement. Can I ever relate on the glass jars! I just took a load to the recycling center on my way home today. I prefer buying things in glass rather than plastic, but it's much easier to recycle plastic here. You got lucky at Kroger today LOL. Fish store trip sounds very successful as well. What is in the stuffed scallops? We had the same kind of weather you did today and never got out of the low to mid 40s. Supposed to be even colder tomorrow. Kathy, I looked at the Venu SQ when I got the Venu 2s. I almost lost my phone in the gym a couple of times, so I wanted something that would allow me to download music and the Venu 2 looked like the best option. I the model with the smallest face available because my wrists are pretty small. There are a lot of free watch faces available, and even more that aren't free. I tend to go for the free ones. I had one called Golden Christmas for the holidays and I changed it to one called Distinct earlier this week. It shows the time in large digits, but also includes several other graphics that are customizable, like HR, steps, intensity minutes, and even current temperature. I would recommend you go into Garmin Connect to see what you like. Not all watch faces are available on all models. I know what you mean about depth charts. I haven't seen UT's but a lot of guys have opted out or have entered the transfer portal. FSU's QB and UT's are in the same boat. This will be Nico's first start and the guys he threw to in the last couple of games of the season are, for the most part, not going to be around him. I wondered if your DB was going to MI after Christmas. Sounds like the weather may be somewhat different from what they've been having at this time of year. Just you, DM, and DS should be a fun time. You won't be watching football unless it's the NFL. What do you think you'll do? We decided we're going to do a Star Wars marathon of some sort on Disney+. Is your mom's side of the family larger than your dad's and that's why there are more matches there? DM's DM was one of 10 kids, so that side of the family would probably have a lot more matches than DF's side, since there were only 2 children on that side of the family. So I don't think I would have nearly as many as you do. Where do you get your deals on Starz? Paramount is now charging extra for Showtime and the only thing left on the movie package we have with Dish is Starz, so we're thinking of dropping that and just getting Starz someplace else. I hope you weren't anywhere around the niece's husband for Christmas, Linda, or are those the relatives in NY? Dale saw where Prime was going to start charging to go commercial free--like Amazon isn't already making gazillions of dollars a year as it is. Thanks for the recipe. It looks tasty. I know your friend was happy to see you and I hope the marzipan pig will work well for her. Did you keep one for yourself? I used the compression garment before I went to Osteo and that saved me time there. In fact, I was in and out before the time my appointment was scheduled. Good session at the gym, too, and used the compression garment again when I got home. Traffic wasn't too bad, so I got home fairly early. My new blackberry plants are arriving tomorrow, so Dale is going to Home Depot to pick up a load of hardwood mulch to put around them and hopefully smother out the remaining weeds. I can probably do that on Sunday when it's supposed to get a bit warmer. I've been in the mood for chili, but not a version with a lot of tomatoes. I found a recipe for white chili that I might try over the weekend. Looks like it would do well in Elvis.

Linda, I noticed a lot of people have already taken down their lights around here. Either that or they didn't turn them on tonight. I'm sure your friend enjoyed the visit and the goodies. My Prime membership renewed in December at the old price and I haven't seen an email about the ads yet. I did see that they were doing that though.
Karen, there was info in the manual about downloading music to my watch, but I haven't gotten that far yet. I don't know if I'll use the music features, but I know you use them a lot at the gym. We don't have any definite plans yet, but I'm sure it will involve eating, lol. DM's parents both had 11 or 12 siblings and some of the siblings had huge families too. My dad was an only child. His mother came from a large family, but his father only had one sister, so that probably accounts for most of the difference in number of matches.
I've subscribed to Starz through their website and also through Amazon. I find that when I cancel it, they're always offering me new deals. Amazon offers deals on their channels, so last time I think I got Starz for $2.99/month for 6 months. They usually have the best deals on Prime Days, but might have them at other times too. Starz.com has an offer now for $3/month for 3 months. The only problem I had was that Xfinity and Starz don't play well together and Xfinity doesn't have an app for streaming Starz on their box. With Amazon, I can go to Prime on the Xfinity box and then get to my Starz subscription. Why does streaming have to be so difficult?

.Well it was dsil's son in law with COVID , now her daughter , and nephew who currently is living with them to satisfy family court on weekend custody of the baby not yet one (after his girlfriend took him to the other end of the state hoping to discourage him. Long trip to fetch the baby and back.turns out she wanted someone to cover expenses for her and her other child , to get pregnant and get another child then leave. Nasty mess. Life savings went to lawyers.)
The baby was sent home with him last weekend with a cold…hmm. So everybody except dsil and spouse ate sick with COVID. Not sure about her son and other nephew who were there for Xmas. her daughter and son in law are supposed to fly home to Denver Sunday. Wow.
