Kathy, I call it the Midwest version because the only reason it’s a curry is because it has curry in it. It’s really a casserole and the recipe came from an 80s version of Cooking Light.
Frozen fish works best. I usually use cod. When the fillets are slightly thawed cut into thick chunks.
Sauté 1 onion, sliced, until soft, in medium heat about 8 minutes . Add minced garlic, 1-2 cloves, and sauté another minute. Add 1-2 TB mild curry (Penzy has a good one) and sauté on low another 5 minutes.
In same sauté pan or a Dutch oven put fish chunks on bottom, cover with the curried onion and garlic. Add one 14-15 oz can crushed tomatoes and one small apple that has been cored and sliced. Salt and pepper to taste. Cover and cook on medium for about 10 minutes. Serve over rice.
Iggy is not crazy about the apple. I only add it if he is not eating it.

Wonder if that would work with chicken. Most fish does not agree with me, never has.
Good Morning. Woke to fairly dense fog. We never get fog, but this is 4 times in the last month. Rain coming tonight and going on until at keast noon tomorrow, which means delivering fridge with rain coming off the roof just as you step up to get to front door to raised entry, only way in with that size. One can hope …
boy do I wish over and over we did not buy with raised tile area by front door. You step up to door and to down to family room, living room, “library/den on other three. Knee hates it.

Linda, I bet that would work with chicken if you simmer it a little longer or sauté the chicken first then put in with the rest. I know what you mean about knees being upset at steps. We don’t think of these things when we are younger. I hope the rain holds off for your fridge delivery tomorrow.

Chele, thanks for the recipe. That looks delicious and would probably work with lots of different seasonings. Is it warming up any there? We're having a high in the 60s today and in a couple of days our lows will be in the 60s.
Linda, we've had a lot of fog this winter too due to getting so much rain. I don't have any steps in the house which I guess is a good thing. I never really thought about it when I was younger either.
Karen, are you rooting for any of the pro football teams? The Bucs game was pretty good until the last half of the 4th quarter. The score went back and forth several times, but they just couldn't stop the Lions towards the end of the game.

We’ll be rooting for the Lions. We can’t do KC because the Bengals were robbed by the refs at Super Bowl.

Thanks for the start, Chele. LOL on "midwest curry". I would occasionally order a green curry dish at a Thai restaurant close to one of the colleges I worked at, but I'm not a fan of the creamy stuff either. I'm surprised Iggy can even taste the apple with all the other ingredients. Has your weather warmed up some?
Kathy, I guess DuhSantis will crawl back to FL now and I wonder what kind of governor he'll be for the next couple of years, since he's pretty much been on the campaign trail since he got re-elected. Sorry the Bucs got knocked out. There were some pretty close games. I'm sure your DBIL is excited about the Lions. Will you be pulling for them now? With the Steelers and Panthers out, I guess I would be rooting for the Niners if for no other reason than their players sometimes attend Giants' games during baseball season. Enjoy that comfortable weather while you have it. We've made it into the 40s, which feels like a heat wave compared to what we've been dealing with for the past week. We made it above freezing around noon for the first time in the past 8 days.
Good luck with the fridge delivery tomorrow, Linda. I hope the rain will take a break at the right time. The house we moved from had one of those step up to the 2nd story or step down to the living room entries and it was a pain. It was much easier to come in through the garage and I'll bet we didn't have the front door open more than a dozen times in the 23 years we lived there. Like Chele said, we didn't think of those kinds of things when we were younger.
The roads were decent on my way to and from iTone this morning. There were a couple of iffy patches but I took it slow. MG meeting will be in person this evening, so I hope we'll get out before the temps drop very far. I also have a 9am dentist appointment tomorrow, so I'll be back on the roads with below freezing temps then as well. Then the rain starts. At least it won't be freezing rain this time.

Karen, I’m glad the roads were clear for you today and hope you have a safe drive tonight. We will have freezing rain overnight and in the morning with a chance of some ice accumulation. We did make it to 37° today.
I made a focaccia dough and it is in the fridge rising. Iggy wants meatballs and tomato sauce with it and I want a mushroom frittata, so I’ll be doing a lot of chopping tomorrow. Ugh! Iggy’s back felt better this morning, so he worked out briefly with me. Maybe I can talk him into the chopping since his back is better.
