I am going to a St. Patrick's Day Potluck this month and have to take the dish in the car and will be driving at least an hour to get to the home it is being held in. Does anyone have ideas or a good recipe for such and event? The hostess is making Shepherd's Pie, someone is already bringing Colcanon, another is bringing a salad of some sort, another is bringing a seafood stew-chowder-soup, and there are two desserts. I'd kind of like to take something vegetarian (soda bread is an option but it is best the day baked...could get up early, maybe?) or a vegetable tray but what would the dip be? So...any ideas and thank you

Here's one I found on line. There are others that are hot cheese dips that will go with veggies. Just search for Irish dips for vegetables.
Irish Veggie Dip Recipe Yields: 2 cups Serves: 16
2cups mayonnaise 1 tablespoon curry powder 1 teaspoon lemon juice 1 teaspoon Worcestershire sauce 1 teaspoon A.1. Original Sauce 1 teaspoon black pepper 1⁄2 teaspoon celery salt 1⁄2 teaspoon Tabasco sauce
combine all ingredients. mix well.

Perhaps take ingredients to make Irish coffee. It could be made with or without alcohol on individual basis.

You can measure out all the dry ingredients for the soda bread the day before and put them aside and just add the liquid ingredients in the morning. Irish soda bread mixes easily and quickly and bakes quickly too.
