Glad most people found yesterday's article useful. There was a question about Collagen Peptides though. I found this information on webmd.com
www.webmd.com/vitamins/ai/ingredientmono-1606/collagen-peptides ...
Collagen peptides are very small pieces of protein from animal collagen. Collagen is one of the materials that makes up cartilage, bone, and skin. Collagen peptides are made by breaking down whole collagen proteins into smaller pieces. When taken by mouth, collagen peptides seem to build up in the skin and cartilage. This might help improve some skin and joint conditions. Collagen peptides are used for aging skin and osteoarthritis. They are also used for osteoporosis, brittle nails, muscle strength, and many other purposes, but there is no good scientific evidence to support most of these uses. Don't confuse collagen peptides with collagen type I (native), collagen type II (native), or gelatin.
I hope that's helpful. (I didn't know much about them either.)
I overslept this morning (no big surprise; Daylight Saving always throws a lot of people off their game the first morning), so I'll do the quotes and jokes after Sunday School...
Today's article is also about low carbs (although not like yesterday's — this one's high in fiber).
- - - www.health.com/low-carb-vegetables-8384887
8 Low-Carb Vegetables That Are Also High in Fiber “ by Chelsea Rae Bourgeois, RDN, LD Published on November 27, 2023 Medically reviewed by Kierra Brown, RD Kierra Brown, RD, is a registered bariatric dietitian and freelance writer on her blog Nutrition with Kie.
What serving of vegetables you should consume in a day vary based on age, sex, weight, height, and physical activity. However, most adults need between two to four cups of vegetables daily.1 However, according to the Centers for Disease Control and Prevention (CDC), only 10% of adults typically meet those needs.2 Meeting veggie recommendations might be even more challenging for those monitoring their carbohydrate intake, since some popular vegetables are still high in carbs. However, many vegetables are actually low in carbs, and high in fiber, making them a great addition to low-carb diets. - - -
Here are the eight. Cauliflower Broccoli Asparagus Purple Cabbage Eggplant Kale Bell Peppers Mushrooms
Each category has at least one paragraph (many have more than one) with additional information. And there's a section near the bottom of the article about which vegetables we may want to limit because they're higher in carbs, namely potatoes, corn and peas.
I suspect we all knew about these categories of veggies, but maybe not all the information about why they're very good or slightly less good for us...
1. Did you learn anything new? 2. Can you add anything? 3. What's going on today? 4. I'll give you a "self-love" question later when I do the jokes and quotes. For now, I have to go shower, dress, make and eat breakfast, and drive to my carpool buddy's home to pick her up, then get us about 15 miles away to teach Sunday school...

Happy Sunday!
Seems as though kale makes every list of what's good for us. One of the veggies that everyone seems to like the least. This figures! Seems as though the veggies that we used to refer to as "starchy", really seem to be the highest in carbs. I am a carb-a-holic, especially when bread is concerned.
Not much going on here today, a very quiet day. Sunshine but cool.

All sound good to me! I've mentioned it earlier in the week, I like the food lists because they remind me of items I like, but get out of the habit of buying.
Cauliflower, broccoli & mushrooms I eat regularly and use in recipes (make use of chopped mushrooms to add more volume with ground turkey in hot dishes & burgers). I buy frozen cauliflower & broccoli florets so I can microwave them as a side. I like fresh cauliflower, sometimes buy a bag of pre-cut. I can't seem to use up a whole head (unless I plan to make vegetable soup - eat some raw and use some in soup)
Purple cabbage & kale are included in salad mix I buy (not a lot of eaither, but some).
I don't buy peppers (red or green) often because I'm the only one in the house who would eat it. But...I'm sure I could use up one pepper (dip in hummus) before it would go bad.
I'd also be the only one in the house who would eat eggplant, so...don't buy it.
Asparagus - I like it, but, it seems like even when I get it (hopefully fresh) at the farmers market, it doesn't live up to the taste I remember from when I was young and it grew wild in the grove.

Spiritual connection - I kind of tap into it when I see moonlight or sunrise through my bedroom window while lying in bed. I link to it when I hear birds singing in the morning or animals and birds creating the sounds of night. As for the vegetables...we eat what is available locally and in season so can't always eat what is on the suggested lists...
