I read the article & saw a few things that I have already tried. I use applesauce instead of fat in lots of recipes.
I have cooded the beans with pasta many times. That is an Italian recipe called "Pasta Fazoli". I have made it for my husband many times. It is one of his favorites. The word "Fazol" means beans in Italian. Another favorite dish is past with cubed potatoes. That is called "Pasta Patta".
I am not a fan of tofu, but some of the others, I may try.

One of the people that I get emails from (100 days of real food) has a recipe for yellow split pea fritters. It sounds good. I am going to make it on my day off on Thursday. Here is the link to the recipe: www.100daysofrealfood.com/yellow-split-pea-fritters/I will check out some of these suggestions also.

Some of those sound pretty good, but I don't care for tofu, and my spaghetti has to be the real thing. To me zoodles and spaghetti squash just don't cut it . Adding pureed beans to chocolate desserts sounds good. I will add chopped mushrooms to my hamburger for hamburger patties. It doesn't really change the flavor and makes a good hamburger. I'll add approximately half or a little less mushrooms.

I usually tend to prefer to eat less of the real thing than make substitutions.
The article did remind me of a couple of things I do like - the "Nice cream" - blending frozen bananas with other frozen fruit. Also, I've never tried the two ingredient bread (which sounds interesting), but I don't really use a lot of bread (and use whole grain when I do) so not sure it would make a lot of difference.

I got lost in the "83 Tasty Ways to Max Out Your ZeroPoint Foods" article. I wound up copying the entire thing (including the links to recipes) into my files! For sure I will try quite a few! And thank you, jan , Jan, for the recipe for fritters! I never make fritters of any kind, but with your recommendation, I now have a way to use up the yellow split peas I bought on sale a few years ago (they've been sitting in my pantry a long time...).
I'm having a full weekend. Will go to Sunday school later today (it's my carpool buddy's turn to drive) and later to a luncheon with DH and still later tutor one more boy this weekend. Have to go shower, dress, make and eat breakfast to start my Sunday.
Great week of information, Jan!

Checking in, but not much to report this Sunday. I'm not doing anything special, but maybe I'll do laundry throughout the day.
