Hi, Betty, Beverly, and everyone.
Miso Ramen with Eggs: 1 T. low sodium soy sauce 2 eggs 1 tsp. miso 1 cup fat free chicken broth 1 chicken bouillon cube 1 piece Lotus Foods Millet and Brown Rice Ramen 1 green onion, sliced - optional
Cook the ramen in the broth, soy sauce, and water for 1 minute. Break ramen apart. Cook for 2 more minutes. Soft poach the eggs in the ramen for 2 more minutes or until the whites are cooked, or longer if desired. Turn off the heat. Stir in the miso. Garnish with sliced green onion, if using. (my recipe)
NOTE: After reading some info, I've changed my method on this recipe: I don't add the miso until after I take the soup off the heat, so as to not kill the probiotic properties of the miso. ---
