DotRen---you mentioned several days ago you were going to make egg roll in a bowl. Would love to have your recipe if you are willing to share it.

Amy, that recipe looks really good. I will be at my sisters for 5 days after my eye cancer removal surgery. I sent her the recipe and hope she makes it. I would use shrimp or chicken pieces, as the only pork I do is bacon.
Thanks for sharing.

You're welcome, Bee. And sending out prayers for your surgery and recovery! I didn't eat much pork before this recipe and, besides bacon, I don't eat it often. This recipe was a game changer for me, but I think using ground pork --not sausage that has all the extras in it --makes a difference for me too. I'll have to try it with chicken or shrimp sometime.

Sorry was offline most of yesterday, needed a break lol. amy , that one looked good! You can get "clean" sausage seasonings (I like A. C. Legg blends from Old Plantation on Amazon). They're inexpensive and a bag seasons 25 pounds. I use 1 tablespoon per 1-1/2 pounds of ground meat and just keep the bag in the freezer. According to them "1 oz. seasons 3.125 lbs of ground meat". pinky , I keep mine pretty simple: brown some ground meat (turkey, pork, beef, shrimp, whatever) with garlic, ginger, salt, pepper and lite soy sauce, then add in a bag or 2 of shredded cabbage (cole slaw blend) and cook until it wilts. You can use other seasonings, but I stick with the classic eggroll filling type and sometimes I add dried red pepper flakes and furikake seasoning if I have some on hand bee , prayers for your speedy recovery! Edit: The reason I like the A. C. Legg one is because there's no MSG, nitrates or maltodextrin in the sausage ones. They have a lot of seasoning blends, and some might have sugar or maltodextrin, so check labels

My day went off the norm, but I think it went well. B: Sauteed kale (a freaking lot of it), paleo chicken sausage and egg L: Munched on walnuts because I had a massive bfast D: Smash burger, on lettuce instead of bun, w/avocado, bacon, onion, mushrooms -- this was pretty good, considering other Friday night options. After watching Ken Berry's youtube video about sugar, it was easy to avoid the bun

Good morning We picked up lunch to-go yesterday from a new BBQ place, and I got 1/2 a smoked chicken and made a salad when we got home lol. It was really good but pretty small. I opened the package and thought Cornish hen, not chicken. Today making carnitas using this recipe, but I'll use orange zest instead of an orange: CarnitasHope you all are doing well

*drool*
My food day is looking inadequate compared to that.
B: Coffee w/collagen and MCT L: Leftover Thai curry with extra broccoli instead of rice D: Probably pulling a jar of the bone broth I made last week out of the freezer and adding sautéed kale, chicken, mushrooms and seasonings to it. I'll probably be able to make it into two meals.

The pork was so rich, I will probably just not eat any more today. It was good though. I ended up having it over a bed of shredded cabbage and topped w/guacamole and sour cream. I didn't make the rice either. The boys had tacos out of it, so all good lol. I also prepped breakfast for DH - I browned breakfast sausage and a little ground beef and diced onion, added egg and sharp cheddar and baked them in this: Wilton Perfect Results Premium Non-Stick Bakeware Mini Loaf Pan, 18-CavityI made 11 of them, 2 for each day for DH (he works 4 day weeks) and a couple of extra for me or son.

Amy that looks good! Swerve would caramelize, I think Normally I would do a quick lime juice pickle on red onion and radish slices for the carnitas, the acid cuts the fatty richness, but I just forgot to do it lol. I don't really pickle them, just a quick (20-30 minute)soak in lime juice, salt and olive oil I'm trying a new product today for lunch: NewdlesThey do have MSG, and some of the other ingredients are questionable, so I'm iffy about them, but we'll see. 710mg sodium and 5g net carbs isn't bad for a packaged ramen, so I figured it was worth a try. If I don't like them, son loves ramen so he'd probably eat them lol.

Thanks for the tip on that, DotRen. I love pickled anything.
I'll be interested to hear how you like the Newdles. I do miss pastas once in awhile, but lately they haven't been worth it.
Today is going to be a light day for me. B: Coffee, Bulletproof L: I/F - armed with walnuts and protein if I get the hangries, which I never have on Keto but just in case. D: Bone broth soup with a balance of protein, fat and vegetable carbs. I'm thinking chicken, coconut milk, sautéed kale (that I'm surpringling enjoying - hated it before), onion, ginger and turmeric. etc. That one's a pretty easy fake it and make it recipe. I also have egg roll bowl ingredients ready to roll. So tomorrow and beyond is all lined up.
