I saw The Ketogenic Bible at Sprouts and then found it 1/2 the price on amazon so I ordered. So much makes sense, after all these years of high carb/low fat dieting! But seriously, DotRen, the recipes you're putting up here are so much better than the book's. Why is it a great diet can be ruined by nasty looking/tasting recipes in the books? ( I was going to put the puke emoji here, but not sure you'd think it was funny )

I think a lot of the problem is that people try to re-create high carb foods and it's just not the same. Once you accept that cauliflower is not potatoes (lol) I think, for me, it's easier

amy, I tend to find more paleo recipes and modify them, than the ones labeled for keto. nomnompaleo.com is one of my favorite sites

I like cheesy cauliflower, but when cauliflower is faked into rice or potatoes, there's a taste that's off-putting for me. I think I'd like that recipe, though.

So far, just the coffee w/ collagen and MCT oil.
Dinner out tonight so probably the leftover bison burger & salad for lunch, if I'm hungry. Lately, with the coffee, I have energy and clarity until 3 or 4pm when skipping lunch. Though I always have some protein and nuts in my bag, juts in case.

How to make chicken thighs do triple duty lol: Buy a bunch of bone-in, skin-on thighs on sale. Pull the skin off for making chicken skin "chips" (if you can't stand pork rinds, chicken skin is really amazing. I pat them dry, sprinkle with salt and pepper and toss them in the toaster oven long enough for the fat to render out and for them the get crispy and firm - you could use an air fryer, too); trim out the bones for broth (save the bones including the knuckles/cartilage along with any onion skins, celery leaves, carrot or zucchini "butts" lol in a bag in the freezer until you're ready to make bone broth) ; dice, slice of flatten the meat for recipes.

Lol. DotRen, if back in 2009 your post about chicken skins was on WW, you'd be run off the boards! And only now does it make sense to me! Makes me think that I should have gone ahead with my childhood dream of selling fried chicken skins, because I thought they were the best tasting part of the chicken. Last night was a huge keto fail and I can tell you after going lightly on healthy carbs, pizza hurts. I think I'm gradually coming to happy acceptance of a keto lifestyle, with better planned carbier days. Today is going to be a light one, starting with my coffee and a big recovery walk. The fun part is going to be figuring out tomorrow, with normal, vegetarian, vegan eaters and me. I already had to tell the vegans to bring their own protein, because apparently their go to holiday one is only during Thanksgiving.

amy, you'd have been a billionaire if you had lol. They make bagged ones, but they have flour and chemicals in them. I'm planning ham, cauliflower mac and cheese that I posted, green beans with butter and making individual cheesecakes (I'll use a little real sugar for DH and DS because it's only like 1T per cake, so it's not the worst. It's funny, I hate erythritol by itself, too "cooling", but I don't mind the swerve brand confectioners, maybe because it takes a lot less?

I haven't tried Swerve, or any of the erythritol. I did pick up some monk fruit sweetener and tasted it. It's super sweet and really good, no aftertaste.
Your menu sounds good. Mine is all over the map. Vegan Tikka Masala, Tenderloin and all the vegetable sides I could figure out that are easy. I can easily work it out with the asparagus, broccoli and cauliflower I'm going to be roasting. If they're still not happy, I've got chips and guac for the whiners. I'll send the tempting things home with everyone.

I ended up making Kraft mac and cheese for them. I just did cauliflower sauteed with garlic and butter for myself, been eating too much cheese this week lol. Amy your menu sounds great Today: B: 1 coffee w/2T heavy cream; 1 coffee w/Califia farms unsweetened creamer L: tuna salad (tuna, dukes mayo, hard boiled egg); sliced cucumber and grape tomatoes D: chicken "fajitas" stir fry: chicken thighs w/poblano peppers, a little carrot and yellow squash sauteed in avocado oil topped w/guacamole I may have a carbmaster or Fage plain yogurt since the calories are under 800 again, or use 2 pouches of tuna at lunch, depends on my appetite.

I'd totally make the Kraft Mac n Cheese if it makes these meals easier! The vegan tikka masala turned out great, and it was nice to toss it into the slow cooker and serve it 6 hours later.
Today is going to be a light one:
Coffee w/Collagen and MCT oil L: Egg w/bacon and asparagus D: Tenderloin and vegetables
Today is kind of a recovery day. I'm going to circle the wagons and try to get this week's eating planned and prepped.

I might prep a ham, egg and cheese bake for tomorrow. I froze the leftover ham, but I hate ham after it's been cooked and frozen for a long time lol. Maybe some sun dried tomato and broccoli in it, too.
