Just bumping this up I discovered the little Dash mini waffle maker is the perfect size for sandwiches. I have a bigger square waffle maker somewhere, for bigger ones, but the dash is the right size for Canadian bacon or sausage patties, like an english muffin size For 2 round waffles 1 large egg 1 tablespoon water salt and pepper 1 tablespoon shredded cheddar (or whatever cheese) 1 teaspoon coconut flour or flax Beat the egg and water well then add everything else and mix in. Pour 1/2 into the waffle maker, close the lid and cook for about 2 minutes, remove and repeat. For a standard waffle maker, double the recipe.

I've been on plan since Saturday and feeling pretty good. I actually have a touch of "keto flu", I'm guessing it's a round of detox from the bbq and things. Low-carb but lots of nitrates, sodium and msg. I'm going to make these "fat bombs" to get my calories up -I'm struggling at that 600-800 calorie mark because of lack of hunger.
Peacan PB candies No bake just melt, mix and pour into a candy mold -1 cup pecan pieces -½ cup creamy peanut butter -½ cup of coconut oil -1 teaspoon of pure vanilla extract -1 tablespoon sugar free vanilla syrup (I’ll use Monin brand because I prefer the erythritol sweetened one)

Those look good! I tried some fat bombs early on and didn't like them much but these look very tasty!
Last week I had a crisis over cherries. On Atkins you can have them in Phase 2 but not Phase 1, which I'm in. But never have I let a 4th of July weekend go without cherries -- that's when they're in peak season, delicious, and cheap, and the only time I buy them. It's a very short season and they are my favorite fruit. But 10 net grams of carbs per 1/2 c. So I broke down and bought one bag and am having only a few per day. I'm fitting them into my carb/calorie/fat/protein macros. And I decided I would rather maintain for a week than go without cherries for a year!
This weekend I also made stuffed peppers, pork tenderloin, and artichokes. It all came out yummy and, along with some baked chicken and salads, will last me the week without cooking when I get home from work.

Cherries are about 8g carbs for 10 cherries, so not out of the ball park I don't normally keep "sweet" treats on hand but the recipe just looked really good

Rene - Thank you!!! I wasn't sure how much half a cup of cherries was -- with pits, without pits?? And the Atkins tracker is just awful in terms of giving you options for different measurements. 8 carbs for 10 cherries -- you just made my day!

New week! I ended up having 2 slices of pizza yesterday and immediately I got stuffy and headachy. Not sure if it was the wheat or something in the toppings.
I'll probably do the ground beef and green bean dish the next few days for lunch to clear that out of my system, still stuffy this morning.

I've tried a bunch of home-made Vinaigrette dressings, and they usually don't taste as good as the bottled stuff lol. This one from Peace, Love and Low Carb is really good. I do use 1/2 olive oil and 1/2 avocado oil because I like the taste of olive oil better. I also use an immersion blender with the vinegar and everything but the oil to get the veggies broken down more.

I'm a little surprised but my challenge on Atkins hasn't been bread, pasta, sweets, etc. but summer fruit. Last week I got some cherries and this week a plum. All allowed on Phase 3 but alas I'm on Phase 2. I fit them into my Phase 2 carb level so I don't regret a thing. 😁

Rene - I grew up using olive oil and red wine vinegar (and salt) on my salads so that's still what I do. I like the idea of avocado oil though. May have to try that ...

I work fruit into mine. It was cherries last week, I will probably pick up some watermelon this week. I just make sure to eat it after lunch so I have the other foods first to help buffer the sugar I started buying this avocado oil: Tropical Plantation 100% Pure Avocado Oil, 51 Oz . It's cold pressed, about 1/2 the cost of name brands and Keto Connect recommended it

Thanks for the recommendation! I was going to try Kirkland brand from Costco since their olive oil is ranked as one of the purest. But I have no idea if that's true of their avocado oil.
Good idea about having fruit with or after protein/fat. I don't have much fruit at a time or in a day, or any of the high sugar fruit at all -- but at this time a year even a few cherries taste SO GOOD!
I found some shredded chicken at the "protein bar" at Wegman's and I'm feeling lazy so I got some. I don't like mayonnaise-y chicken salad so I'll either top green salad with it, or stir fry with peppers and onions and cauliflower. Also found some pulled pork at Costco, which was good mixed with sugar free BBQ sauce. I like the Kingsford pulled pork in the regular grocery store a little better, but the Costco one was cheap!
I also bit the bullet and bought artichokes again. So expensive, but I love them and so easy to steam them in the instapot.

I went off plan a bit yesterday for my birthday, but I only had 1 meal, so I guess it wasn't the worst lol. My blood ketones are at 1.4 so it didn't mess me up too bad. There's a Chinese restaurant that makes this julienned pork, peppers and onions in a black pepper sauce that is so good. I had that and about 1/4 cup of steamed rice, so it wasn't over the top bad (I didn't get shrimp toast or dim sum lol).
