Hubby brought in a weed today and asked if I liked it. I said I wasn't sure. Found out it is purslane, tasted one leaf that was lemony and have decided perhaps we need to wash it and have it in a salad for lunch. We have a lot of it and it is good for us. Oh we LOVE purselane! One of the farmers at my local farmer's market has it growing wild on his farm and he brought some in last year and I tried it, it's fabulous and yes, has a lovely lemony taste to it. I lightly steamed it and put a drizzle of olive oil on it, a light sprinkling of salt, and that's it. A squeeze of lemon if you want to accentuate the lemony flavor. It's also great steamed as a bed to put some sort of chicken, fish, tofu, etc. on top of it! Damn, now I want fresh purselane and I don't go to the farmer's market right now because so many people don't wear masks. I need to see if I can grow it!

When you steamed it did you steam the entire plant with stems of take the leaves off and toss the stems?
It grows wild in our garden. I did look it up online and there were pages with ideas for use in meals...the one I want to try next is potato salad with purslane. I did find these two sites on how to grow...microgreen or in the garden:

I trimmed the bottom/thicker part of the stem but steamed the whole thing. It doesn't break down like spinach does when you steam it. Try it!
