Copycat Cracker Barrel Corn muffins 3/4 cup yellow corn meal 1 1/4 cup self rising flour ( I make my own from regular flour and baking powder) 1/2 cup sugar 2 large eggs 2 tablespoons honey 3/4 cup buttermilk (I usually substitute in 3/4 cup sweet milk soured with a tablespoon of vinegar) 1/2 cup butter, melted and cooled
Preheat oven to 350 degrees. Grease a 12 cup muffin pan, or line with paper liners. Combine cornmeal, flour and sugar in a large bowl and mix.
In another bowl, whisk the eggs until beaten, then whisk in honey and buttermilk until completely mixed.
While stirring, slowly add the buttermilk mixture and melted butter to the flour. Do not overmix, stir until just mixed (there will be lumps)
Spoon the batter into the muffin pans filling each about 3/4 full. Bake at 350 degrees for 18- 20 minutes until the muffins are set and the tops are lightly golden.
Remove from the oven and let cool for 2 - 3 minutes.

I have never made the two recipes back to back- and cannot say which one I prefer. Obviously, neither is healthy. I have made Janes (the first one) using yogurt instead of sour cream . She indicates that that is how she makes them, with whichever (sour cream or yogurt) is in the house. Have made the Cracker Barrel recipe a lot- its not healthy for you but is reliable and is a real winner. The first recipe is Janes....I will edit the post to reflect that.
CJ- totally agree with you- put the cozy things quilt away and find something that brings joy to you to make. You just got all that lovely fabric from Missouri- although I suspect that you have such a large fabric stash that you have many projects there waiting for your loving touch. Just make sure you can print out the directions of the cozy things quilt and make a kit of that from the fabrics and your already made blocks. Then if you want to go back to that project you can do so easily.
Ruth, you are a much more brave crochetter. The amount of new project patterns you take on is incredible. Yes you will find another project for that bulky yarn. Like you, I cannot try new stuff late in the day- that is when I mess up and make mistakes.
DD is coming over....and I think My mattress is being delivered today.

Quiet here.
Got 99% of the first panel quilt done and I did show it to Dd#2 who loved it. Hope to have both done in a day or so. Then I guess on to a small quilting gift I am going to make for Jane- which I hope works out.
At long last my mattress was delivered this am and it seems great. Plus its my height- Dh was 6’3” so having an extra thick mattress and a thick box spring was not an issue. Plus he liked a super firm mattress. This mattress has the short box spring and is soft- felt great when I check it it out earlier. Good to see Dd. We went for a walk this afternoon- it was a bit chilly but not too bad.
Hope everyone is getting some crafting in. Gonna see what is on television and crochet a bit. G

Ginny, I'm so glad you got the mattress and it's all intact this time and not wet. I hope you get a great sleep on it. It sounds like you're coming right along on your Christmas panel quilts. I hope making the gift for Jane works well to with no glitches to take care of. It's the mug organizer, right?
Now that i finally got the logistics of this pocket shawl all straightened out it's coming right along but it's kind of tedious and repetitive and I can see it taking some time to complete. I haven't worked on it at all today.I need to get busy. I have two more to make. I'm making each one from a different pattern.So it will be 8 patterns used when I get done with these. Then after Christmas two more.
Speaking of tedious Ginny, I went back to that youtube video of the shawl I told you about and you made(was thinking of making the cluster one) and was about to jump into cyberspace to strangle aja. since I made my shawl from the written pattern for the child shawl she has in the description box because I was making it for my youngest grandaughter I didn't watch much of the video. Oh, my goodness, Aja sure repeats herself a lot and I kept telling my computer screen....come on, come on, lets get on with this. I'm not a patient person so when these video instructions flow like molasses it drives me crazy. So I'm sorry I got you involved in a tiresome video. I had forgotten that I did it from the written instructions so forgot to tell you that. The one I made..the child one is v stitches. Did you do v's or clusters?
It was a nice day here. Up to 50 but windy so felt colder but still nice.
Ok on to crochet.

Ruth, indeed you are going to be busy getting all 8 (yikes!) pocket shawls done. Yes, they are somewhat repetitious but time consuming. I knew you were making several of them but had no idea that 8 different patterns were involved. Hats off to you for being so adventurous. Lazy me, I would have perhaps picked out 2 different patterns and then a bunch of different colors and let each person pick the one they liked. But you are so industrious Now onto Aja Joy. I made the cluster pocket shawl. Admittedly the first time I viewed the video I wanted to strangle her also. She has a big heart and seems to be such a kind hearted person, but I tired of her ramblings about crochet being love and.....seriously.... if you have to chain 80 for a foundation chain, its not necessary to show video of her chaining all 80. I am not a patient person either....would have much rather she put the video up split screen- with the one side the directions in text form, the other side her crocheting. She does give that information to you at times... Anyway I give her a ton of credit for coming up with a really easy and cute pattern and taking the time to make the videos. Gotta say as I approached the end and was looking for the pocket instructions I put the video on- fast forwarded when I could- and also multi tasked until she was finally at the point I wanted to see. The pocket shawl came out pretty....and my Dd loves it.
Just look at the absurdity of both of us saying we are not patient people, yet all of us here will PATIENTLY spend hours quilting, crocheting, knitting etc.....guess we all just like concise instructions.
Heading to a light show this evening with Jane, In the county they make a light show from large lawn ornaments- usually flowers, bugs (5 feet wide lit butterflies!) etc.....its a pretty thing to do on a winter evening and tonight is not supposed to be too cold. Jane has never been there, so I will take her. Probably when I return from church I will work on the first panel quilt to get it done. Want to get a walk in today as its a bit cool but sunny. Hear we are in for some rain tomorrow. G

Hello Crafters - Hope you are all doing well today The weather here has been nice this weekend, but maybe with some rain and a storm tomorrow. Then it's supposed to get cold after that. I may join in the Jelly Roll Quilt Along that Pat Sloan is starting tomorrow. It only runs through December. I have a half size (20 strips) jelly roll that I bought at JoAnn Fabrics awhile back. It's all soft colors (kind of pastels) with a white background. The quilt along has you pick from one of the free patterns at the Fat Quarter Shop and I think I would like to make this one using the Crib Size directions: www.fatquartershop.com/jelly-belly-bars-quilt-pattern-free-pdf-patternThe crib size only uses 17 strips and I found some pink print that would go for the background. I could just pull out 3 strips that I could use as maybe binding. I think it would make a cute little girl baby quilt. I just want to wait to see how she is running this quilt along. Some of hers I like but I find that those block of the week or month ones just don't work for me. This one is quick like the Jelly Snowflake, so hopefully I'd enjoy it. Hope you are all having some nice weather and getting to do some crafting. Take care

Cute quilt CJ- and very different than other quilts in design. Like the idea of the soft pastels with the pink print. I am sure it will make a lovely quilt.
Got some crocheting in this evening. Went to a Christmas light show with Jane- its a botanical garden all lit up in Christmas lights...very pretty and the weather was still mild. have a good night Ginny
