Breakfast(vegan): hot cereal, apple, cinnamon, tbsp ground flax seeds, coffee
Lunch(vegan): pita, filled with leftover choumar and some additional garbanzo beans, stuffed peppers, fruit salad, fruit butter, tsp olive oil somewhere in there(1)
Dinner(vegan): vegetable soup made with leftovers and an expired onion soup mix packet for flavoring...forgot to look to see BUT it is possible the onion soup mix packet was not vegan or vegetarian?
Snacks(vegan): apple with peanut butter and a grapefruit

JANUARY 17
Breakfast: (vegetariain): egg on toast with tomato and spinach and black coffee
Lunch(vegan): leftover choumar with garbanzo beans in pita wrap with leftover vegetable soup and kiwi for dessert
Dinner(vegetarian): garbanzo bean/mustard/tomato/lettuce pita wrap followed by labneh with a banana, tbsp apricot butter/jam and an ounce of cashews

Breakfast(vegetarian): egg on toast with tomato and black coffee Snack: grapefruit Lunch(vegan): red cabbage, beet, apple, onion, bit of sugar and olive oil with apple cider vinegar on potato mashed as base followed by a mandarin orange Snack: apple with peanut butter Dinner(vegetarian): nonfat labneh, tbsp apricot jam, banana, kiwi, 1oz walnuts

JANUARY 19
Breakfast(vegetarian): toast topped with cooked tomato and fried egg with black coffee
Lunch(vegan): Lentil chard soup, mandarin, grapefruits,
Snack(vegan): apple with peanut butter
Dinner(vegetarian): fried egg in pita followed by nonfat labneh, apricot jam, pomegranate arils, kiwi, and walnuts

JANUARY 20 Breafkast(vegetarian): egg on toast with tomato cooked in the microwave and black coffee breakfast
LUNCH(vegan): leftover lentil soup and red cabbage-beet-dish and fruit
DINNER (pescatarian): was an egg mixed with can of tuna and turned into patties with some ketchup and mustard.

Breakfast(vegetarian): egg on toast with tomato and French Press coffee
Lunch(vegan): rice, borlotti beans I defrosted and added bouillon cube to topped with steamed broccoli and dessert was grapefruit
Snack(vegan): egg on toast then red wine in the tub while reading
Dinner(pescatarian): leftover rice from lunch topped with peas and tuna in a gravy made with broth and flour

Breakfast(vegetarian): toast topped with cooked chart, tomato and egg with black coffee
Lunch(vegan): hummus wrapped in pita with lettuce, cabbage, grated carrots and homemade pickles
Snacks(vegan): pomelo, apple with peanut butter
Dinner(vegetarian): nonfat labneh mixed with pomegranate arils, chopped banana, walnuts and homemade mulberry or plum butter...wasn't labeled but was tasty.

Snack: grapefruit
Lunch(vegan): vegetable bean and grain soup with a pita wrap filled with hummus, cabbage, lettuce, carrots and pickles
Snack(vegan): peanut butter in apple halves, popcorn made with olive oil
Dinner(?): may not happen...or maybe my snack was dinner? Or...maybe I will have a few weeklies and a few more calories to have a meal? We will see.

cathygeha , thanks so much for sharing your menus Great ideas You are welcome...not all are vegan but most are at least vegetarian with sometimes tuna added in here and there. I find eating vegan without some of the vegan options available or prohibitively expensive or too bothersome to make...not always feasible. Even the rice and bulgur has to be washed and rinsed due to bugs and such...it is what it is.

Breakfast(vegetarian): egg and cooked tomato on light toast with black coffee
Lunch(vegetarian): 2 oranges as appetizer, stuffed green pepper(leftover rice, rgabanzo,zucchini from yesterday) cooked in tomato paste, onion, garlic, broth sauce with black eyed peas then nonfat labneh and homemade jam for dessert
Dinner(vegetarian): pita wrap filled with light halloum cheese, sauteed cabbage and pickles toasted in pan so bread was crunchy then nonfat labneh with chopped apple and banana, sprinkle of sugar and cinnamon with tbsp sesame seeds
