Breakfast(vegetarian): egg and tomato on toast with black coffee
Lunch(vegetarian): pita with cheeese and some zaatar + leftover stuffed pepper + fresh fruit salad
Dinner(vegetarian): walnuts, fruit salad, nonfat laban-labneh, tsp sugar, tsp fresh homemade peanut butter

I *had* to have a pbj tonight using the homemade peanut butter so...that is what I am having now Breakfast(vegetarian): toast topped with cooked spinach and tomato topped with an egg, and black coffee Lunch(vegan): half blood orange, sweet potato, beet, beans and corn in tomato sauce Dinner(vegetarian): peanut butter, jam, fruit salad, nonfat laban-labneh with tsp sugar

Breakfast(vegetarian): cooked tomato and spinach on toast topped with an egg and some black coffee
Snack: grapefruit...had two small ones
Lunch(vegetarian): Mexican bowl: bulgur, beans & corn, cabbage, lettuce, grated carrots, chopped tomatoes with garlic, mixture of yogurt-labneh, grated halloum cheese, and some ranch dressing mix
Dinner(vegetarian): nonfat laban-labneh, an ounce of walnuts, 1/3 cup oats, 1.5 tsp sugar, fruit salad
NOTE: Going into the challenge I knew I would not be doing a true Veganuary...heart wasn't in it BUT still stayed OP with the Blue or Purple old WW program and only had tuna a few times. I could and still may go 100% vegan but not till I figure out the nutritional aspects of it and can be sure I will meet human basic requirements with what is available here in Lebanon.
