I have signed up again for the Veganuary challenge but still have some dairy to use up. I also find that not having some of the items I have had in the past to make it easier might keep me from being 100% vegan but I will be vegetarian on the meals I am not vegan.

Anyway, I will post my menus/meals and recipes for the month to keep myself accountable. I hope that if anyone else has vegan/vegetarian meals to share they will do so, too.

January 1st - Saturday [vegan breakfast and lunch - dinner vegetarian due to nonfat yogurt]
Breakfast: tbsp peanut butter on toast with 1/2 cup fruit salad and black coffee
Lunch: steamed sweet potato with salt sprinkled on top with second dish of fennel greens and onions sauteed in a tsp olive oil with black eyed peas added in and seasoned with salt and pepper with an apple to finish
Dinner: 1 cup nf laban/yogurt, 1 cup fruit salad, 1 oz walnuts, tbsp apricot butter

Sunday January 2 - Lunch was VEGAN but dinner and breakfast were VEGETARIAN
Breakfast: egg and cooked tomato on high fiber toast with grapefruit and black coffee
Lunch: mjudra (lentil-onion-bulgur) and cabbage salad (shredded and dressed with garlic, lemon and tsp olive oil) with mandarin and navel orange from our trees
Dinner: egg and halloum cheese in pita then laban-labneh (yogurt-and yogurt with whey removed), homemade apricot butter, walnuts from our trees and fruit salad

January 3
Vegan till dinner...had some nonfat laban and labneh with the fruit
Breakfast: white beans with leftover salsa heated and topped with toasted bread pieces with a grapefruit and black coffee
Lunch: makhlouta mixture cooked and used as base for a bowl then topped with laban-labneh, some ranch dressing mix sprinkled on top, lettuce and cucumber-tomato-garlic-onion mixture with some grapes and half an orange (Makhlouta is a mixture of dry beans and wheat berries I cooked in the pressure cooker)
Dinner: leftover mjudra and cabbage salad then later some laban-labneh, banana, guava and homemade guava butter/jam

Lunch: leftover soup vegetable-bean soup from yesterday, 1/2 apple, mandarin

Breakfast(vegetarian): spinach, tomato and egg on toast with black coffee and grapefruit
Lunch(vegan): baba ganouj with tomato-green pepper-onion-garlic then salted sweet potato, and beet with half a pear for dessert
Dinner(vegetarian): nonfat labneh, 2tbsp homemade guava butter/jam, walnuts from our trees, fruit salad

Breakfast(Vegetarian): egg on toast with tomato and spinach, grapefruit and coffee
Snack before funeral thingy(Vegetarian): labneh, fruit salad, fruit butter
Sandwiches at condolences were chicken salad, tuna salad or turkey and cheese...I passed.
Dinner(PESCATARIAN?) - was ravenous and could have had vegan if I had chosen beans instead of tuna...but I didn't): 3oz pasta, tuna in water, leftover salsa mixed with tomato paste and some chopped spinach in a bowl
I might have more fruit or something else later...maybe peanut butter in apple halves or something like that...we will see

I am doing the old WW Blue plan and decided to leave the points for that plan in instead of deleting them.
Breakfast(2): fried egg(1 for the oil) on toast(1) with spinach and tomato and black coffee then a grapefruit later
Lunch(6): steamed potato(5) mashed with white beans mixed with some water and vegetable bouillon cube + sauteed onion in olive oil (1) and added shredded/thinly sliced red cabbage, chopped steamed pre-cooked beets and a chopped green apple...added a splash of apple cider vinegar and a sprinkle of white sugar and salt -> navel orange and mandarin for dessert
Dinner(8): nonfat labneh, fruit salad, tbsp fruit butter(2), oz walnuts(6)

January 10 - Switched to WW My Way Purple today using Better Balance on I Track Bites now Healthi app to track
Breakfast(0): hot cereal with nonfat labneh, apple and pomegranate with coffee [Vegan]
Lunch(1): baba ganouj leftover soup adding in the chopped steamed potatoes, leftover white beans, leftover salad with green pepper and tomato and onions, more onion, and the white beans then fruit salad after a grapefruit (I counted one point for the tahini in the portion I had) [vegan]
Snacks(3): popcorn, apple with peanut butter(3) [vegan]
Dinner(4): egg sandwich(2) with a bit of spinach in the egg and mustard with fruit salad, nf labneh and tbsp guava fruit butter(2) [vegetarian]
8/16 daily points used 28 weeklies remaining 1321/1431 calories eaten
(Note: would have been within points on WW My Way Blue, too, but maybe closer to using up all points for the day)

Breakfast(vegetarian): nonfat yogurt, oats and cream of wheat, fruit salad, tbsp flax seeds, tbsp coconut, coffee (overnight oats...put the oats, tbsp cream of wheat, fruit, seeds, coconut into bowl with nonfat yogurt and left covered in fridge till morning)
Lunch(vegan): bulgur, beans with broth and cauliflower, leftover red cabbage, beets, apple dish and later a grapefruit
Dinner(vegetarian): walnuts, nonfat yogurt-labneh, fruit salad, guava butter

Breakfast(vegetarian): spinach and tomato on toast with an egg, black coffee and a grapefruit
Lunch(vegetarian): lentils, bulgur, nonfat laban-labneh, ranch dressing mix(might have points but not counting them)
Snack: popcorn with friends
Dinner(vegan): leftover baba ganouj soup. Then an apple with peanut butter.
Might or might not have something else later.

Breakfast(vegetarian): toast topped with spinach, tomato and egg with black coffee
Snack: grapefruit
Lunch(vegan): chicory(curly endive) green chopped, boiled, dressed with lemon and tsp olive oil, and as the main course had stuffed red and green peppers - stuffing was cooked bulgur, lentils, onion, garlic and tomato sauce with extra sauce to go on top. Dessert of fruit salad
Dinner(vegan): hot cereal using oats and smeed/farina/cream of wheat that I added cocoa powder, salt, vanilla, sweetener, banana, and tbsp peanut butter - to then sprinkled with sugar. The peanut butter disappeared, the bananas sort of melted, and it was just bland...maybe chopped peanuts would have been better?
I am way under points and calories are at only a bit over 1000 so do see eating something else later...not sure what...but something.

Breakfast(vegan): hot cereal with fruit salad, tbsp flax seed, tsp sugar, French Press Coffee
Lunch(vegan): boiled potatoes mashed and topped with white broad beans and sliced stamdzucchini with some mashed garlic, lemon and drizzle of olive oil with grapefruit to finish
Snack(vegan): popcorn, tsp olive oil
Dinner(vegetarian): nonfat laban-labneh, fruit salad, 1oz walnuts, fruit butter
