I was able to sleep until 3:30 this morning so maybe I’ll start sleeping later now.
We met a guy in Aldi’s parking lot who had the most beautiful dog in his car. It started barking at me and the guy started apologizing but I told him no need he sees a stranger talking to you and is letting me know not to get too close as he will protect you! He said it’s part lab and I think ridgeback but not sure. He had put his older dog down recently and could not stand the loneliness so last week went to the animal shelter and adopted this one. I congratulated him and said at our age and having had the heartbreak of putting down five dogs just could not do it again.
But as much as I do miss them it is getting easier and I find myself glad I don’t have to get outside in the cold and rain or snow plus no cleaning up misses from the pee pad or throwing up on the rug plus the $500 being put out each month on food, grooming and diabetic supplies. Hope I’m not sounding heartless as really just stating a fact.
Today do have to get to our Schnucks as after going to Aldi’s yesterday just didn’t feel like going anywhere else. But I did concoct a new dish and made it for a hot lunch. I made up a box of stove top stuffing (actually the Aldi’s brand) put it in the bottom of a 9” dish, topped it with mixed veggies (steamer kind that I microwaved first), then cut up some rotisserie chicken and put that on top, pressed it all down, put a can of condensed cream of mushroom soup all over that and then topped with fresh mushrooms and baked it at 375 for 45 minutes. We both really liked it and very little fuss so it will be made again. I could have put it in an 8x10 Corning Ware dish so it would have been more spread out but the 9” dish worked fine for us. I know it’s high in sodium but under the amount of carbs I’m allowed at each meal so just drink more water to compensate for the increased sodium.
Hard to believe it’s Friday and already the 6th of the month!

Sandy I love making dishes with some of those Campbell soups. Sometimes I will mix in a tablespoon or two of Dijon mustard which just adds a bit more flavor to it.
I also love cooking with mushrooms and tend to buy them quite often. One of my favorite and very simple recipes is to take a tablespoon of mayonnaise, you can use a low fat or no fat version, mix in a tablespoon of Dijon and perhaps a pinch of cayenne or other seasoning and just spread it on top piece of fish.
I often do this with salmon.
I used to put it in aluminum foil for about 20 minutes and then just put it under the broil for a couple minutes.... These days I just tend to bake it in about 400 for maybe 15 minutes in my convection oven. It is really delicious and so simple.
I've even made it for dinner parties and always get raves and requests for my recipe when it's really nothing more than mixing a few things together!

I'm sorry I've been missing for a few also not gone back and read the last couple of days. I have just been worn out completely no doubt leftovers from covid but also from the stress of not having any heat. Finally yesterday They got the heater fixed boy I just felt like falliing in bed and sleeping 14 hours.

Welcome back Jenny! I missed you & was concerned about you with no heat. Happy to hear your heat is working again.
I still have not been able to enlarge the photos. It may be my computer. I just have basic capabilities & not as many as I had before. My phone is the same way. I'm not one for frills - I don't really consider that a frill though.
Has anyone been watching the voting for House Speaker? I may be the only political junkie on here. I'm waiting for McCarthy to pull out & let someone who can be elected run. He keeps making recessions & they haven't benefited him yet. I'll watch what happens today.

I can't enlarge the avatar photo either, but... No idea. I am trying again to get a phot of myself on here, but now, my phone won't speak to my 'puter. Tech-savvy I am not.
We went to breakfast with our retired teacher friends. Only 5 of us today. I had a garden omelet that was yummy with salsa spread on it. Dinner this evening is going to be spaghetti.
I love reading the descriptions of each of you, and enjoy your photos.
Time to put away Christmas decor.

I changed my avatar but this picture is about 3 years old & taken when we were still spending summers at the campground. However, I still wear my hair the same way & weigh about 5# less. May have a few more wrinkles too!

It has been fun meeting each other this month.....Jim still in bed but I hear him coughing so it's time to get him up and probably clean up for breakfast. Hopefully it will be a quiet day. It is cold for us here....44 degrees!

Thanks Jenny for the name and it is fine when you need time off, most of us do at one point or another. glad you feel like posting again and so glad the heat is back on./ Is the weather better now as well? understand getting caught up after being away but no hurry, we were all just muddling along!!
Marlene, No we may be political but the decision was made awhile back to not discuss Politics on here. It can cause a lot of problems and it was starting to so that is why you see none. Hope that is okay for you, and that you stick with us. We talk about a lot of other fun things! I believe there is another forum for politics and know some have posted on that in the past. But just as another suggestions but please do stick with us also.

But then I can't put my pictures on at all, The Pro Boards don't accept my phone or Shutter Fly where I have photos stored / So you can just guess what I look like. I did a couple of posters years ago from the old WW site Before they dropped it and we came here. One was from Ca. and we had a lovely lunch when I was out there visiting my brother, He was worried about dropping me off in case she was a guy and a predator !!! So funny he came in the restaurant where we were meeting and he met her too Was so fun!! The other lovely lady was visiting Pa and not too far from where I lived. Came to the house and we had a lovely afternoon .
Sandy, I agree with you completely, I made the decision after I had to put Calli down no more cats. I have always been a cat person and was taking care of 2 more. the stray in the neighborhood and also my DGSs cat. When he went to college I inherited it and then he started dating a girl that was allergic so Zorro became mine. The stray was one the neighbors left when they moved. Just up and left which is very sad. My Grandkids wanted me to get another one but my DGD#1 was allergic to Calli and it is nice now to have her come and be able to stay the afternoon if she wants. She could only hang out for about half an hour before and her eyes would start itching. Time to go. Took me forever to get rid of the dander from Calli and now no more kitties. I can't believe the cost of having a pet these days.
This afternoon I have to take the diabetic socks I ordered for my neighbor from amazon. Hope they are okay for her. they look very comfy so if she doesn't like them I will keep them. I like socks in winter only-- especially around the house. I do still like knee highs for my dress shoes with slacks. This lady is hard to please but I try. She asked and I said sure!!

I did a load of towels this morning. I also put away the groceries that were delivered. Next project is to get the garbage ready for pick up. It's cloudy and 27 degrees.

Sorry about my political comment - not political preference. I guess I didn't see it as favoring one side or the other but I'll refrain from saying anything in the future. The last thing I want is to upset the apple cart. I realize it is sort of a rule of thumb not to discuss politics but I didn't think this was particularly offensive. Guess I was wrong. Thanks for drawing it to my attention.
