Thanks for the resources, DotRen.
I'm reading Dr Josh Axe's version of Keto. I'm not sure how it's different from the others, but he leans toward healthier versions of meats and fats.
As far as the carbs, I think his keto diet allows carb days, especially if you need the carbs for workouts. Just not every day. I still am in the early stages of looking into this, definitely not a pro!

Okay, I had bacon for breakfast and had some fat from it. I seasoned some cauliflower florets, rolled them in the fat, and sauteed. Half way done I added some chopped asparagus. Very good. And I usually only eat cauliflower raw, as I don't like the cooked smell. Cauliflower is great as a curry too, just cook/steam, add coconut milk and curry paste

I know a lot of myth about keto/low-carb is that people eat a lot of fat, a lot of calories. Some do, for sure. If you're on any FB groups you see a lot of people showing plates of what looks like a meal for 2-3 people. That CAN happen when you first switch "fuel" from carbs to fat, but after a week or two that usually slows down to a more normal appetite. For me, I usually get less than 1200-1300 calories, not intentionally, my tracker says I should be eating 1500-1700 but most days that's more than I can eat and I don't push fats. It would be easy to add extra mayo, extra butter or whatever, but most days I don't feel the need for it. I usually don't have the MCT powder, but since I ate a big pile of fries Saturday, I'm giving my system a little boost. I used it yesterday but I don't think I'll use it today because I don't feel any brain-fog lol.
Breakfast Gv - Heavy Whipping Cream, 2 Tbsp. Perfect Keto - Mct Oil Powder, 5.5 g (one scoop) (*I didn't have this yet, may not)
Lunch Hass - Avocados, 2 ounce King's - Kimchi (Spicy), 2 oz (56g) Great Value - Wild Salmon Fillets, 113 g (4 oz) Sir Kensington - Avocado Mayonnaise, 0.5 ounce
Dinner Kroger - Aged Swiss Slices, 1 slice (21g) Marketside - Romaine, 1 cup (as a wrap for the burger) Broccoli Salad - Broccoli Salad, 4 oz (broccoli, cheese, bacon, mayonnaise, vinegar, splenda naturals, salt and pepper) Heb - Natural Angus Beef Ground Beef 85/15, 5 oz
Totals 1,057 calories; 10g net carbs(carbs - fiber); 18g total carbs; 8g fiber; 80g fat; 61g protein
I may have a Two-Good or Carbmaster yogurt later if I feel the need to snack.

Hi everyone!
I've been eating strict keto since October 2017. I'd been on WW off and on (you know how it goes) for over a decade. I'd reached goal, become frustrated and tired of being hungry all the time and fighting cravings constantly so "took a little break" and gained back 45 of the 60 lbs. I'd lost.
I'd been fighting a sugar/carb addiction and a binge eating habit since my early teens, and all WW did for me was to make those two things more difficult to manage. By going strict keto, I've been able to completely eradicate the cravings caused by my addiction. In times of high stress, I still get the urges to binge sometimes, but at least now if I give into those, it's a binge consisting of pecans, instead of a tub or store bought frosting or a box of store bought croutons. That being said, the urges to binge are few and far between, not something I fight daily or weekly like in the past.
Keto has also reversed my pre-diabetes. I'm off the blood pressure and cholesterol meds that I've been on for decades, no longer have debilitating knee inflammation and pain, no longer suffer chronic migraines, anxiety, ugly elbow eczema, adult acne, acid reflux and more. All of which I've suffered with for years, even when at my WW goal weight. With keto, I've been actually able to lose an additional 15 lbs. below what was my WW goal/maintenance weight. A weight that I never thought it would be possible to see again. I have more energy, I'm more joyful and my anxiety and depression are almost completely a thing of the past. When I do have an episode, it's very rare and the duration is fleeting.
My only regret with keto is that I didn't find it sooner. For me the real beauty is that I just eat REAL FOOD. Very few processed or packaged foods. My foods have the shortest ingredient lists imaginable...Haha. Expensive and gimmicky products sold with a "keto" label on them are so not necessary. The food bill for myself and my husband is the lowest it's ever been, and I even have my senior dog off of commercial dog food now. She's a keto pup and at 14 has more energy and is in better shape that she was at 4.
I am a believer in high fat, moderate protein and minimal carbs. This absolutely works for me and has improved every aspect of my daily life.

I do know that if I stay away from carbs, I don't want to snack. I also eat real food. Crackers are my downfall --- not cookies, cakes or ice cream --- plain old saltine crackers.

The best thing about going keto for me was it absolutely killed all of those cravings for crackers, bread, potatoes, pasta, sugary snacks, baked goods, candy, etc. All of it, just gone. I had to start thinking of sugar and carbs as a drug. I consider it to my own personal heroine. And for me, even a little bit is too much, I just cannot eat that stuff in moderation. It may sound extreme to some, but for me, living a life that is not controlled by hunger, cravings and binge eating has been so freeing.
And in case anybody is wondering, I generally eat somewhere between 1300 and 1650 calories a day. The breakdown is approx. 10 - 15 grams of TOTAL carbs, about 55-60 grams of protein and about 120 - 150 grams of fat.
I'm about to turn 55 later this month. I feel younger, more energetic and more vibrant and clear headed than I did at 30.

Lora, IMO since I am one who needed to lose weight most of my life, 'moderation' was not in my eating vocab.

Not necessarily been wanting to go full Keto, but wanting to go back to Atkins again has been in the back of my mind. You know how when you have a kid, you say you don't want another one because of all the pain? and then you forget about all the pain, and have a kid again? lol That is how I am about Low Carb/Keto/Atkins...only I CAN still remember how horrible the pain was from NOT having carbs. Gonna follow the Keto thread. Maybe it will help me "forget" that carbs taste so good and I can get motivated enough to attempt it again

jeanie, I never really get the "low-carb flu", so I can't relate. I know how bad some people feel, but electrolytes seem to help get past it quickly. My calories are low today because I woke up with a sinus headache and upset stomach (lol the perfect diet- don't feel like eating!) I'm boiling a whole chicken and will take the breast meat, off, then cut the legs and thighs off and roast those for Dh and Ds for dinner. Tossing the breast carcass back in to make a more flavorful broth, then straining and adding my veggies for soup for lunch. B: coffee L: chicken soup (chicken broth, celery, onion, zucchini, chicken breast) D: roasted chicken breast; green beans and mushrooms w/cheese The green bean and mushroom dish is easy: drain your canned green beans and mushrooms and warm them in a skillet, add a little heavy cream or half and half- once that's hot, add how ever much and whatever kind of cheese you like (shredded/grated) you want along with a little salt and pepper, turn off the heat and stir until the cheese is melted.

Lora, you're inspiring! What does a typical day's menu look like for you? And thanks for all the menus/food ideas, DotRen. I'm going to attempt to make a taco soup today. If it turns out, I'll post the recipe.

Thanks for that, DotRen. I just finished the taco soup, it was a slow cooker recipe, and the ingredients are very similar to your friend's recipe. Double the meat, double the cream cheese... I made it with lamb and bison, and it's pretty good. I'm going to try yours next time. Seems a lot easier than doing it in the slow cooker!
