Created a side dish, as my son tells me I need to learn to eat cooked cauliflower.
I sauteed cauliflower florets with garlic powder and minced onions. Then chopped up some kimchi and added. It was very good.

I used riced cauliflower for any recipe that calls for rice. If it's in a liquid, reduce the liquid because the cauliflower won't absorb like rice does

Okay, Keto or almost Keto Ladies --- what's on the menu for today?
I only like rice as a cereal or in fried rice. Haven't been brave enough to try the riced cauliflower. BUT thanks for the suggestions.

Today was a little changed because we made a vet visit (recurring skin infection, like to catch it early) Breakfast was an iced black coffee; Lunch was sardines and a simple lettuce salad with ranch dressing Dinner will be fried catfish* in a low-carb tortilla w/cole slaw *(Church lenten Friday fish fry -I'll just have the fish and give DH the sides and make my own coleslaw).

I was going to make this for dinner, but really want the fried fish. It's usually awful lol -but kind of a tradition. Here's the recipe I'd planned and will probably make next Friday: Tuscan Butter Shrimp

Dinner was grilled halibut with mustard sauce, roasted cauliflower and an asparagus salad. The taco soup turned out great. I'm thinking of making it next time with chicken or some sort of stew meat. It's pretty much the same recipe as posted above except I used this taco seasoning: www.allrecipes.com/recipe/46653/taco-seasoning-i/ I triple the taco seasoning recipe and store it in a small mason jar. It's really good and I like knowing what's in it.

So I ate the fish fry plate lol. The reason: they used a gluten free cornmeal this time(no flour)and there was maybe 2T breading on the whole thing so I calculated for 2T of bobs red mill g/f cornmeal @ 15g carbs, there were 5 french fries (I counted over saying 2oz but it was probably just 1) and maybe 1/4 cup of pinto beans along with a coleslaw that was oil and vinegar, not a sweet base. I went over what my normal carbs were but not by much, I estimated 30-32g net carbs for the day since I only had a small romaine salad at lunch. Strictly speaking the fish fry was not keto because of the cornmeal, beans and fries, but I made the choice to have it because it still fell just over my carb allowance I go with 30g net carbs a day because that's my "sweet spot". Many days I'm a lot lower, but if I stay at 20-25 for long, my keto-mojo shows over 3.0 and I just feel "off" when it's that high. For me, measuring around 1.5-2 is when I feel best.

Are you measuring for ketosis, DotRen? So far, I'm just trying to stick to my macros and determine how I feel, when it's close or not. Usually, it'll be: "It's a good day" or "Well, maybe tomorrow" -- What do you use to measure it?

I bought a keto-mojo meter that tests for ketones and also has a blood glucose option. The ketone strips are pricey but, after the initial honeymoon phase with the meter (lol), I only test maybe once a week or if I feel like I overate carbs. I tested this morning and I was at 1.2, so the food last night did not knock me out. The urine strips are great at the start* as a visual, but they only measure the ketones you're not using, where the meter measures the ketones in your blood. *Once you're fat adapted, the strips become unreliable because you're using ketones as fuel and not getting rid of as much. The keto-mojo, order from them not amazon because KM will send you email discounts for the strips and things, and they have really good deals on the new meters and kits that you might not get on amazon

Sunday menu plan: B: coffee w/nutpods creamer L: strip steak (grilled or pan fried) w/green beans (or asparagus, haven't decided yet) D: not sure, might do a quick broccoli cheese soup (chicken broth, broccoli, a splash of heavy cream and some shredded cheddar blended) I might give this bread recipe a try. I like the dietdoctor.com site because you can change the number of servings and it does all the adjustments lol: Low-carb zucchini ciabatta

So far all I have planned today is coffee & MCT oil and some of the taco soup. Tonight will probably be a chicken salad with asparagus.
I have the ingredients for the green bean casserole you mentioned above, so I'll have to see where that fits into my macros.

I'm doing a modified fast until dinner today because I feel like I snacked too much yesterday (thick cut bacon in 1.5" pieces, crisp, makes a great "low-carb" chip for guacamole lol).
B: coffee
L: broth if needed - I'll use herb ox sodium free because the bacon I had yesterday had so much sodium D: grilled sirloin, roasted asparagus and steamed broccoli or a salad
Sodium is not a bad thing on keto/low-carb because the plan itself is a diuretic, but I could tell I had way too much yesterday. The herb-ox is not strictly keto, but I choose it so I can add the amount of salt I want without having that 400-700mg that is already in it to deal with.

I think I'm going to make this as my salad for dinner: Cauliflower rice tabboulehI'll add kalamata olives and some diced red onion, and I use frozen cauliflower that I rice in the food processor, otherwise it's really good as written
