Since eggs are back on the good list I think i will go back to cooking them in the oven. Put eggs, in shells, in a muffin tin. Bake at 325 degrees for 30 minutes. Take out and immediately put in a bowl of ice water for 10 minutes. I have had success doing them this way. Even though we are at high altitude in El Paso i didn't have any problems. Tried it here in Angel Fire (we are much higher) and not so good. Will have to experiment on doing them in the mountains. Today is our 44th anniversary. We will go to the Country Club to eat tonight. Pete's Birthday was the 27th so we will celebrate both. Have a good day everyone.

ANGIE glad you're home safe and sound.
MARY, I've done really well learning to adapt. The weird thing is I can eat the GREEN parts only of leeks and green onions and I do that and it's great. But I wind up throwing away the white parts. None of my immediate neighbors are much into cooking and leeks are something that lots of folks don't use anyway. Weird THEN just as I learned to embrace cauli rice (always liked the mashed cauli), Now I can't have it anymore. But I can have taters and rice so I guess that's a fair trade. But not so great for WW.
CONNIE I think it's a scientific fact that losing weight is 10,000% HARDER than gaining. I mean who here has to say "OK time to buckle down and GAIN WEIGHT?" It happens overnight as we sleep!!
LOUISE me too! I slept w/ few interrruptions from 1AM to 11:30AM!!!!!!! I was so worn out. I feel better now and am not productively coughing thought I don't like the color of what I'm producing. I shall use my nebulizer regularly today.
TERRY and MARY that's amazing that those sites are already converted to the new system. That must have taken some doing. I've done Simply nourished a lot as well as skinnytaste. Drizzle is a new one to me. TERRY I was eating a lot of HB eggs on Keto so I broke down and bought one of those cheapy egg cookers (does 7 eggs and was under $20). OMG they come out perfectly in 14 min. Peel great! Happy Anniversary.
ANGIE putting decorations up is a chore. Taking them DOWN is a pain in the patoot. I guess we'll do it this weekend. Luckily the lights on the roof are done by a fireman who does this as a side business when he'd off duty.
Off to do my nebulizer and then some breakfast. Better late than never.

Mary, the chicken chili looks good. I may have the stuff to make it. If not, will make it next weekend. Just heard we may be getting ice in a day or so. Chili sounds just perfect.
Sandy, guess I need to figure out how to use the slow cooker side to my Instapot. We've only used it for pressure cooking. I think my family would eat that w/ the potatoes.

Got up and took Autumn to swim practice this morning so I could hit the grocery store. Got a lot of veggies to go with dinner. I'm going to figure out a way to switch to eggs in the morning. I want to make a few to take with me and eat in the car on the way to work. I want to find a better receipe than I've used in the past. The kids still have all next week off. Our schools didn't line up this year. I go back on Tues, no students until Thurs. Later this afternoon, I'll start working on some school stuff. The last day before break, it was decided that I would teach a new class. One I've never taught before, but I'm expanding my little world. So, I want to at least have a few things ready before going back and not be stressed the first week.
Oh, not sure if I mentioned. I got a FB Alta HR. I'm syncing it now. My other FB is charging. I don't plan to get rid of it just yet. OK, off to get lunch and be productive.

OMG STEPH I'm almost just the opposite. I've used my IP twice for pressure cooking and countless times for slow cooker. I love how I can brown/sear the meet first, then do it on slow cooker. If you don't have a glass lid for the slow cooker, I'd recommend it. (can't recall if I ordered that extra or if it came w the IP). I had preordered a FB Ionic and apparently just in time. My Alta stopped charging. I even bought a new charger and tried 2 different computers. If I held it "just right" it would show charging for a few seconds and then stop. I already had them replace if for the same reason.
Confession. I ate 3 Trader Joe Peppermint ho hos last night. Like an oreo w/ crushed peppermint inside. And I've been living on the potty last night. Unfortunately there are lots of ingredients that I have no idea if they're FODMAP compliant... or is it the wheat flour? I mean did I suddenly develop celiac at age 66? NOT RIGHT DANG IT. So back to NO FODMAP and this weekend I'll judiciously try onions and then garlic. I'd rather be gluten free than garlic and onion free.

Steph....I also get a FB Alta HR....it was the one I ordered on Black Friday only to receive an empty box. Long story short, after a chat with the 4th customer service fella, I ended up with a credit to my account that allowed me to go and purchase it in my store....came out to be the same sale price....plus another $20 in Kohlβs cash. Suze would be proud of me! Havenβt had time to even take it out of the box...maybe later today.

Welcone back TERRY it's good to see you. I'm sorry to hear about your Dad's health issues and the loss of your kitties, and glad to hear things ate settling down.

Waving to everyone. I slept late and got my first "stand up" shower in 11 weeks, then visited with my 83yo aunt for over 2 hours, and had a leisurly lunch with my brother and sister at the local pub. Now home resting my foot a bit and need to wrap a few gifts later. My Sissy is taking such good care of me. Love that girl.

We have two condos here in Angel Fire. One is a two bedroom and the other a one bedroom. We previously had both of them in the rental market. When Pete retired and we knew we would be coming up here more we took the small one off for us to stay in. Makes it nice cause i don't have to pack everything up every time we leave. We had done work on the other one when we bought it cause it really needed it. This one only needed a few minor things. Now that we are going to be in it I want to redo the kitchen. We had contacted a contractor who was redoing our friend's condo. Between trying to finish hers in time for renters and the holiday he just came over today. He has arranged for us to go look at cabinets and counter tops tomorrow. Originally we were going to go home Sunday but now will stay till Tuesday. Will bring samples home so we can choose then go back and give them our decision on Tuesday before we leave. I will be getting new cabinets, counter tops, back splash, sink and faucet. Also all new appliances except the stove. We will have cabinets all the way to the ceiling to give more storage. (It is a small galley kitchen). Will put in can lights for the lightning with a small light over the sink. I am real excited to get this done. He did a wonderful job on my friends condo. She redid her whole condo. Though it means several more days away from my fur babies. I really miss them. I have started looking at the different sites for ideas for recipes. DH loves pasta dishes. I found one on Simply Nourished Living that uses Spaghetti Squash instead of pasta that I am going to try. I have never done Spaghetti Squash. Our cousin from Denver always joins us here for Christmas and cooks Christmas dinner. This year she did a pork loin and an Acorn Squash casserole that was very good. Even DH liked it and he isn't usually big on those types of dishes.

Steph I saw on the news where Austin started pre-treating some of the major roads but the news at noon didn't think Central TX to get much ice but now we are expecting colder temps starting at 7 PM NYE instead of waiting until midnight.Who knows?We plan on staying home anyway but it would be bad if it iced up for the people celebrating NYE.I haven't even used the pressure cooker in my IP yet.Still working on what to cook in it.Our HEB was so crazy busy this afternoon.I hope we have better weather for you going back to work Tues.

Crappy sleep. Horrendous sinus headache.
Did get on treadmill, tho. And made a pot of sausage/cabbage and potato soup.
Have to pack lunch and head to work. Ugh!

ANGIE I'd say my IP is a lot like my cell phone. Capable of doing LOTS of things but I keep using it as an elementary calling device and a slow cooker. I am resistant to change apparently.
SUZE does sound like a kicked back holiday so far. Enjoy. And THANK YOU JEEEEZUZ that Suze finally got a shower!!
TERRY I love spaghetti squash but to cook it I only like it cut in half, seeded and put cut side down in an oven until the edges get to be very browned. Then it takes on a roasty nutty flavor. I even like it w a bit of EVOO and S&P. Nothing fancy about that.
BECKy supposedly there was some pre-treating of the overpasses here. The roads that consistently ice over when it gets bad. We'll see how THAT works.
CONNIE I was going to make ham, cabbage and potato soup but I need to sub SOMETHING for the cabbage. I can eat most greens so maybe collard? I don't cook w/ lots of collards but it should work. Otherwise kale.
OHHHHHHHHHHHHHH MYYYYYYYYYYYYYYYYYYYYY GODDDDDDDDDDDDDDDD. Miss BRISKET IS DECEASED!!! **FAINT**
We had left over turkey/veggie chili over brown rice pasta w/ some cheese. I'm sipping on almond milk hot chocolate w/ a dash or 3 of cayenne (I can feel it on the back of my sore throat). I may make another cup b/c it felt so food when I swallowed. I'm sneezing and coughing and now I sound like Roland and Ryan. Hope Bob doesn't get it. 4
I have a HUGE chicken back and a dozen chicken feet in a crock pot making bone broth. Some turmeric, cayenne, leek tops, and a stalk of celery. I'll take the veggies out after 24 hours and keep cooking the broth for another 2 days. I hope it turns out as well as the beef bone broth. That was AWESOME and full of natural gelatin. I'll drink some and make pho w/ some of the rest using rice noodles. mmmmmm sounds good for this sick chick.
Watching Dateline and then off to bed. Night kids.

Terry....the condo renovations sound exciting! We updated our home last spring....all new flooring, paint, added a bac splash in the kitchen. We really like the results.
Becky...I'm not sure what I'm going to make in the pot....we won't get more beef until late Feb or March....could do chicken I think. I'll have to,research some re pies.
Steph....I need to go exchange my FB Alta....the band was a little snug for my liking....so set up delayed.
Suze....omg...I bet that shower felt absolutely awesome!!!!! Glad you are having a nice time with your sissy & other family.
Celeste....how are Ryan & Roland feeling by now? Better I hope. And no....Bob sure doesn't need to get the crud. How is he tolerating his chemo? Keeping him in my prayers.
Sandy.....thanks for faithfully starting us up / getting our next challenge ideas together. A weekly check in would be beneficial for me. I'm up for whatever but my creative juices are not flowing just now.
We had a pretty productive afternoon. Took a load of treasures to the goodwill, checked out Planet Fitness....think we will give it a try for a month...it will only be $11 each. Then we went mattress shopping.....I just feel so awkward trying different ones out. But for the $$$$ I want to be as sure as possible that it is what I want.
leftover turkey tonight....I think I'll do a pot pie tomorrow.

LOL ok that should be shower standing up versus shower chair with foot hanging out lol. Still have to cover foot, but at least can stand on it.
I hear sis rattling about downstairs... time to get up.
